weekend

weekend happenings + finding peace in a culture of scarcity

Welcome back to Monday! I’m tempted to be overwhelmed by all the negative parts about Mondays – missing the weekend, having obligations, less time to do what I want, feeling an overwhelming sense of scarcity (I didn’t get enough sleep, I should’ve worked over the weekend, I need more coffee, I didn’t get my to-do list done), and already, before the day’s even started, looking forward to the weekend.

Do you ever wonder if this is why life seems to fly by so fast? Because we’re constantly “looking forward” to things instead of enjoying the simple things that we get to do every day?

I’m in the middle of a new book (shocker, because I haven’t read a book by choice in God knows how long) called Daring Greatly. It’s all about our culture of scarcity, of “powering through” to get to the relaxing or fun parts of our lives. Ideally we’re all supposed to be doing something we love each day, but even if that’s not true, it’s seriously so important to realize and catch yourself when you look past the day and to the weekend, or a trip, or a happy hour, or even just 5:00 that night. Life happens all the time, not just when we barrel through a workday and finally get comfy on the couch 8 hours later.

Do I seem emotional? Man have I been lately. That, coupled with the fact that I did an hour of yoga before dawn this morning, have turned me into complete mush. Heartwarming commercials are making me cry, and One Republic is playing constantly on my computer and giving me the kind of butterflies in your stomach that only really personal music can give you.

I’ve been freaking out lately. Overreacting, having panic attacks, even practically pulling my hair out.  Nothing has changed but for some reason I’m not coping well with my life right now. But I do know one thing – waking up this morning and doing sun salutations while the sun rose was quite literally one of the most peaceful things I’ve done in awhile. Daring Greatly has made me take a step back and see everything in life as something to be appreciated for what it is—living! I sometimes look around the train on my commute and wonder, do the people around me realize how random and insane it is that we’re even alive? It’s too early to get too deep (haha) but really…think about your life and how crazy lucky you are! I know I’m doing that more and more lately.

Image

I’m really trying to get a handle on this out-of-control feeling that keeps rushing over my body when things don’t go my way. I had a bad weekend. I looked forward to a night off on Saturday and, so is life, things didn’t turn out exactly as I’d planned. What was my response? Pure anger. I was so, so angry. I let it ruin the whole night, and I wasted it. Now there’s nothing I can do to change what happened, but it’s so therapeutic to write it down, admit it, and hopefully react better next time. No more running to the bathroom to breathe deeply into my hands and pull at my hair.

I woke up this morning with every intention of running four miles. I was going to pound the pavement and get that high that only comes from a good run. I was going to turn my music up to max volume and tune out the world. But when I woke up this morning I felt a voice telling me that tuning out the world by blasting loud music and pushing my body to its limits this morning was not the way to start my week. This morning, the only answer was yoga. I didn’t have a mat, my hands are covered in rug burns now, but I feel incredible. I woke up with the sun and now I’m going to start my week in peace. I got enough sleep last night, I’m excited for the week ahead, and I know I’ll handle whatever comes my way. Let’s all avoid the culture of scarcity and just accept ourselves, and our lives, as enough, as worthy.

Image

My weekend wasn’t all bad—Saturday morning I spent some great quality time with my parents. We went to the grand opening of Trader Joe’s in my hometown and it was, as expected, a blast and a half.

Image

Sunday morning Zain and I went out to brunch at a French-themed restaurant, so right there we were combining two of my favorite things. It was almost an hour-long walk there and back to the restaurant but the sun was out and it gave Zain and me a chance to talk, electronics-free and enjoying the sights and sounds of the city. I was able to indulge in one of my favorite French treats (a croque monsieur—holy moley) and enjoy the feeling of Spring in the air.

Image

Also, in a weird twist of fate we passed by a CTA stop that looked IDENTICAL to the metro stops in Paris. The whole morning took me back to my time aborad.  I think it was a sign – that was a time when I was forced to be independent, flexible, and vulnerable. Who knows, maybe it was God’s way of telling me to reignite that strength inside of me, even though I’m home now

Image

As I sit here, writing this early in the morning, I can’t help but have this awesome feeling of hope for the week. I’m smiling because I can feel myself growing emotionally and spiritually, two parts of myself that I tend to neglect. Don’t get me wrong, I have the physical health down pat. As “healthy living” bloggers it’s basically a rule, right? But health isn’t all about getting your vegetables in. We are complicated, beautiful, messy humans, and we have many sides to take care of. So I hope that by acknowledging my weaknesses as of late I’ll be able to make a difference in my emotional and spiritual state. That way I can truly call myself healthy.

Okay—so enough about me. Tell me about your weekend! What cool things did you do or how did you relax?

Questions:

  • Do you see yourself living a culture of scarcity?
  • How do you take the time to cultivate your emotional and spiritual sides?
  • And to lighten things up, tell me your favorite animal and why 🙂 I love pugs and can’t stop looking at pictures of them. INSTANT HAPPINESS!

Have a beautiful Monday!

Whole Wheat Banana Pancakes (recipe)

I’m an eggy gal. There’s no denying that. Bagel sandwiches, omelets, and scrambled eggs fill my plate Monday-Friday. Eating eggs at breakfast is one of the only things that keeps me full and my stomach quiet until lunch time rolls around. However, once the weekend rolls around, I love pancakes. Not that Bisquick crap, but big, fluffy, homemade wheat pancakes that sit in my stomach for hours and sing happy songs.

So today, as it snows another foot or two, I decided it was a banana pancake day.

Sometimes pancakes made with wheat flour can have a grainy, chewy texture that bugs people. I took a chance by combining a few different recipes that I found on the internet and luckily they turned out great! They have the appearance and taste of regular pancakes but don’t leave me hungry 30 minutes later. So enjoy your Saturday and think about making these when you wake up tomorrow. Pancakes are God’s way of reminding you that it’s the weekend, and time to take a breath and relax.

Image

Whole Wheat Banana Pancakes

Ingredients

  • 1 cup buttermilk (or 1 cup milk mix with 1 tbsp white wine vinegar or lemon juice)
  • 1 cup whole wheat flour
  • 2-3 ripe bananas, smashed
  • 2 tsp stevia or sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp cinnamon
  • 2 tbsp flax seeds (optional)
  • 2 tbsp chia seeds (optional)
  • 1 egg
  • 2 tbsp melted butter

Steps

  • In a big bowl combine the flour, sugar, baking soda, baking powder, and cinnamon. Set aside.
  • In another bowl, whisk together the egg, melted butter, and milk.
  • Whisk the wet ingredients into the dry ones until just combined. Stir in the bananas until distributed throughout. If you stir too much the pancakes will probably get tough so stop stirring once it all looks combined. Lumps are okay!
  • Preheat a skillet to medium heat, using Pam or butter to grease it. Once it’s hot, use a big serving spoon and pour the batter in circles on your skillet. Don’t touch until you see bubbles starting to pop–at that point it’s the perfect time to turn them over.
  • Keep cooking until they look toasty brown on both sides.
  • Serve with real maple syrup. Every time you use that high-fructose corn syrup junk a small business owner dies.
  • Enjoy 🙂

Question:

  • Do you change up your normal breakfast on the weekends?

picture this: weekend

First things first: listen to this song during your next workout. I played it on repeat for hours during my workouts this weekend and my commute to/from the city. It’s so joyful, catchy, upbeat, and motivating. Obsessed is too casual a word for what I feel for this song.

Well it was a busy weekend full of work, great food, and workouts. So not much different from a typical weekend, but worth a share. Sometimes the best way to share is through nothing but pictures, so without further ado….my weekend.  Happy Monday!

I just started including bosu balls into my workouts…. it adds a whole other dimension to workouts

Friday I worked 13 hours aka it was a Venti kind of day

It’s just a wee bit cold in Chicago…

ImageImageImageImageImageImageImageOkay I lied I have a few words for the end of this post…Happy birthday, Maja! You’re a wonderful mom, the best in the world, and you always look out for me and want what’s best. Thanks for always supporting me and being the passionate, beautiful person you are. I love you so much….have a fabulous day full of cake and dancing!

holiday treats and graduation eats

It was a busy weekend full of holiday spirit and family celebrations.

On Saturday Zman and I spent the day walking around the city, enjoying the falling snowflakes and musicians that lined Michigan Avenue with Christmas music. We also ate quite a bit of “comfort food”, aka cheese fries aka crap. But hey, they were delicious and it was just one of those days when you want hot cheese on top of fried potatoes.

Image

ImageImage

All I want for Christmas is YOU:

ImageImageImage

You would think that two normal-sized human beings wouldn’t each need their own order of cheese fries but you would be wrong. The two of us don’t mess around with food.

After we got home we were chilled to the bone, so we popped in “I’ll Be Home for Christmas” and made some hot chocolate.

Image

Trader Joe’s Organic Hot Chocolate packets and Bailey’s topped with whipped cream and mini m&ms. Deeeeeeelicious.

The next day my family and I headed to Milwaukee to see my twin brother graduate from Marquette! Congrats, Steve!

Image

Post-graduation brunch (like we need a real reason to go to brunch):

Image

“Green eggs and ham”: Eggs scrambled with pesto and marscapone cheese plus ham and potatoes. I gave the ham to my dad and doubled up on the potatoes.

In case you suspect that I ate my body weight in butter, cheese, and oil this weekend, remember it’s always possible to balance all that artery-clogging goodness out. I did manage to eat lots of healthy food recently as well:

Image

Summer salad: mixed greens, mandarin orange slices, tomatoes, dried cranberries, blue cheese, walnuts, and balsamic vinaigrette. A piece of baguette on the side.

Image

Overnight oats: 1/2 cup oatmeal with cinnamon, chia seeds, flax seeds, and peanut butter.

Image

Veggie omelet: two egg omelet with green peppers, onions, and tomatoes, topped with avocado.

Image

Caprese salad with balsamic vinaigrette.

Today I did what most people do on Mondays and started out the week with an intense workout. I don’t know about you, but Mondays are when I’m feeling most motivated and I give the best effort.  I’m also the type of person who can’t make a resolution on September 7th or start a cleanse on a Thursday though. I’m just weird about coinciding big changes in my life to beginnings on the calendar (new year, new week, new month, etc.).

Image

I did not, I repeat, did not RX this workout. I started out doing 50 of each but by the time I got to kettlebell swings I was toast. From there I did 25 of everything, replacing the burpees and wall balls with other activities because I’ve had a lot of back pain recently.

Speaking of back pain, today is my first time visiting a chiropractor! I’m pretty nervous but also really excited because I feel like that’s just what I need to get actual answers about what’s causing this back pain. Doctors can only do so much, it seems, and I’m sick of getting a muscle relaxer every time I complain about pain.  We’ll see what happens!

Questions:

  • Have you seen a chiropractor? Do you “believe” in them, or think they just get you addicted (I’ve heard both ways)?
  • Can you start a new routine on any old day or do you need it to be a new week/month/year like I do?

weekend + tabata day

Today was one of those workouts that seems easy but ends up kicking your butt.

It was tabata day! Tabata training is where you alternate high intensity exercises and short breaks.  This kind of workout took me awhile to get on board with.  I’ve been a believer for most of my life that the longer you exercise, the better.  I figured 60 minutes on an eliptical watching Sex and the City reruns was the way to go, and laughed when I saw infomercials for workouts that would get you your dream body in only 12 minutes a day.  It just didn’t make sense to me.  Nowadays, I’m much happier working out for 20-30 minutes a day sweating my butt off the entire time.

Image

The basic outline for a tabata workout is:

  • 4 minutes long
  • 20 seconds of intense exercise
  • 10 seconds of rest
  • Repeat 8 times for a total of 8 rounds

We had 5 exercises to complete so the whole workout was 20 minutes long. Also, we were only allowed to record our lowest score (so even though I thought I was a badass and started with 13 pushups, I had to record 7 because by the 8th round my arms were crying uncle. No one will ever know of my initial glory. Except you fine folks, of course 🙂 )

Aside from my arch-nemesis “the pull-up”, this was very doable.  By the end we were all groaning on the floor, but isn’t that what a good workout should look like?

The best part about tabata training is you can do it anywhere–a hotel room, park, living room, etc., and it doesn’t take up too much of your day. If you want to give this workout a go at home, just replace the pull-ups with another activity like jump roping or mountain climbers–all you need is a stop watch, some loud music, and determination to get it done.

Weekend

A few pictures from the weekend–it wasn’t the healthiest. Not by a longshot. Our crazy girls weekend didn’t go as planned (Megan sprained her ankle on Thursday) so we ended up moping around her apartment which led to not-so-great food decisions. The highlight was definitely the turtle races. Even though they still scare me…

Image

ImageImage

ImageImageImageImageImageImageImageImageImageImage

As you can see, fall has finally arrived in all its crisp-air, crunchy-leaf glory! I spent the last few hours of the weekend outside by the lake and it was beautiful.

Today or tomorrow I’m going to try a new recipe for cheesy cauliflower and grilled chicken–if it works out, I’ll share it soon!

Have a great Monday 🙂

weekend happenings

This weekend was full of firsts.

First apple picking of the season

Image

Image

It was insanely hot for October (hence the shorts) but doing activities like this make me so happy because I get to enjoy all that fall in the Midwest has to offer.  Plus this apple orchard was less than ten minutes from my house and I had no idea! I’ll definitely be back this season.  Now I just have to figure out what to do with all my apples…

First time at The Signature Room of the Hancock Building

Image

Image

I’m still really mad that this came out blurry. We asked one of the security guys there to take a pic and he took half a dozen, ALL blurry. Oh well we can all just pretend.

ImageImage

Champagne is my favorite!

Please excuse the quality of these pictures…being the fancy place it was, the lighting was pretty dim. My flash went off once and I just felt my classy factor plummet so I put an end to that.

First time eating lobster (hey, when in Rome)

Image

Lobster bisque (to die for)

Image

Twin lobster tails with three cheese cous cous, swiss chard, and citrus butter.

Too much decadence.

The whole experience at The Signature Room was magical. I’m a foodie but I don’t go out for high class meals like this often, so it was a really nice treat! I felt like a grown up 🙂

First time crafting a new fall wreath

Before:

Image

After:

Image

It might not look like much, but my mom and I took off a ton of the old leaves and fake red berries and replaced them with a ton of vibrant berries with a beautiful fall palette.

First time trying Turkish Get Ups

Image

This workout was pretty focused on practicing the new movement, so after we were done I headed to the gym to get in some time on the elliptical.  It was fun to learn a whole new high-function movement, though!  If you’re interested, feel free to check this out : 7 Secrets of the Turkish Getup

Oh, and it’s hella awkward. I’ve never done anything like this before so it was weird at first. But after a few times I can see why it’s an effective workout.

In other news…

I’m also using this time to really get a fire under my butt about what the next step is for my life. I’m using the new season as an excuse to jump-start my job search and self-discovery. There’s no better time than now, and I realize I need to make some big decisions before I start to get distracted by the holidays. It’s a crazy time, and it’s only going to get crazier!

I hope you all had a great weekend! I’ll be back tomorrow with a new recipe (perfect for the chilly weather!)

Question:

  • What’s the fanciest place you’ve ever eaten?

Weekend happenings: Dallas edition

To say that this weekend was eventful would be an understatement.  Zman’s grandma hasn’t been doing well so we flew to Dallas on Friday night to spend a few days with his family.  While we did a lot of our usual Texas activities (hello, bbq), the weekend had somber undertones.  That, combined with the Dallas Cowboys first home game of the season on Sunday night, and it was a pretty eventful weekend!

Image

We were originally planning on being in Dallas to celebrate Zman’s brother’s engagement! So while we spent some time at the hospital, most of the weekend was spent with his brother and fiancee!  It was so much fun.

Friday night we got to O’Hare airport early enough to grab a quick dinner before our flight.  There are a million options at O’Hare but we settled on Goose Island Brewery.

Shenanigans ensued.

 Image

Image

I got the grilled chicken sandwich with a side of fries. I loved this sandwich! It was on wheat bread and I could tell it wasn’t slathered in butter like most sandwiches are.  It was actually a double-decker sandwich so I took the middle layer of bread out to cut back on the excess.  Then I ate the fries and everything was even 🙂 All about the balance, people.

Image

Of course since we were in Dallas one of the first thing Zman wanted to do was get Dickey’s Barbeque.  Saturday afternoon was full of mac and cheese, brisket, bbq sauce, rolls, and waffle fries.  It was a doozy.  I knew I wasn’t going to be getting much of a workout in for the weekend, however, so I separately ordered a bbq grilled chicken sandwich and heated up some green beans that I found in their freezer. Sometimes you’ve just got to be that weird person who healthifies their meal! It was tough because their mac n cheese is to die for!

Image

Image

Later that night we went out for a celebratory dinner at Maggiano’s for the engagement!

Image

This was the most upscale Maggiano’s I’ve ever been to.  It looked like a casino!  Minus a few hiccups thanks to a snarky waitress and a group of 15 that was hard to control (haha) it was a deeeelicious spread. Did you know that when you order a dish from Maggiano’s they give you another one to-go? What is this madness? I mean I’m all for free food, but why, America? I’m not a big fan of Italian food but when I do get it, I almost always get eggplant parmesean. It’s one of my all-time favorites

Image

After dinner the rest of the group wanted to go out but Zman and I decided to head back to the house and watch a movie.  Around midnight I wanted ice cream and stumbled upon some mint chocolate chip in the freezer.  I saw a box of cake cones in the pantry as well and was excited because I love putting my ice cream in cones!  Hysterically, the cones were “kid cones” and probably only held half a scoop of ice cream at the most. It was so funny–talk about portion control!

Image

Sunday consisted of two things: hospital and football

Zman and his brother rocking our purses in the hospital:

Image

The stereotype about Texas is true: they live and breath Cowboy football.  Wherever we went (including the hospital) people were wearing their Romo jerseys and talking about football statistics. I’m a football person but let me tell you, there’s a difference between love and OBSESSION. Still trying to pull Zman from the dark side of obsession but I guess that’s one thing I have to accept 😉

Image

It was a fun night watching the game at Zman’s house. His family created a makeshift theater in an empty room upstairs using a projector and a few LazyBoy chairs, so we made popcorn, ate candy, and cheered for the Cowboys (who won, by the way!)

Image

Image

This morning was horrible.  We had an early flight at 6am so we were out the door by 4am.  Normally I’m a early bird, but this excessive wake-up call made me extremely nauseous. I spent half the flight not speaking to Zman for fear of projectile vomiting and the other half making him be my personal pillow. Boyfriends are the best.

I spent the day working from home and then going to a shift at the restaurant, followed by an hour-long cardio session at the gym. It’s been a long day!  Can’t wait for things to settle down tomorrow!

Question: Do you ever “healthify” foods when you’re with a big group of people even if it makes you stick out like a sore thumb?

Which store has your favorite iced coffee? The iced coffee from “Baked and Wired” in D.C. (next to the cupcake) is in the running for me!

If you could take a weekend trip anywhere, where would you go?

scenes from the weekend

Aside from feeling sick on Saturday and pretty much slothing it up all day,  I had an amazing weekend.  My best friend Megan and I went to separate colleges after high school and have tried our best to visit each other at least once a year, but now she’s all moved back to Chicago! It’s so great to have her back. I spent much of the weekend catching up with her.  We’re both in the same boat for the next few months (unpaid internships whadddup) and it’s so nice to have someone who can relate.  Post-college life is definitely strange!

As usual I took plenty of pictures of our shenanigans so without further ado, scenes from my weekend!

As we walked home along the Chicago River there was a family getting off their boat with huge plates of food. As we we passed them they yelled to us to offer us sandwiches!  I’m never one to turn down free food so I grabbed a turkey sandwich and put it in the fridge for later. You guys…the bread was the softest thing I’ve ever held…I wanted to take a nap and have that sandwich be the pillow

It was such a great weekend that even the stop-and-go traffic on my way home didn’t rain on my parade.

I hope you all had an amazing weekend and that the weather is as beautiful for you as it is here. I just want to be outside all day! Summer is finally here …better late than never 😉
