WIAW: back on that healthy train

I did a great job getting produce into my day today! It’s the little things, right? Considering I dove headfirst into a bag of m&ms at 10pm yesterday I did a great job starting from scratch this morning.

ImageI hardly ever go out to breakfast but I was running late this morning and had a giftcard so I picked up some Panera oatmeal. It was steel cut oats topped with  brown sugar, pecans, and strawberries. It was AMAZING. I’ve never been gung-ho about Panera (except the black bean soup yummm) but this was out of this world delicious.

In other news I read an article that cardigans are for old people. Not sure what that means, or what journalism has come to, but my cardi and I disagree. From a warmth and fashion stance.

ImageLunch was chicken chili with avocado and cheddar cheese from Protein Bar. Like I said, I was running late so today I made an exception and bought lunch too. Not my favorite thing considering I spent $11 on this meal (absurd) but I have to say that with the temps in the teens this lunch felt great.

Luckily I did manage to grab a few snacks for the afternoon at the office.

Hearty snacks right there. I ate these right before I left the office because I knew I’d be working out and would need something to power me until dinner.

Today was fun because I discovered the rowing machine at my gym! I rowed 3000m and did 35 minute on the elliptical while watching Chopped.

The rowing machine is a great way to switch things up in the gym. I blasted some music, rowed to the beat, and it was 3000m before I knew it.

I ran upstairs to make the new episode of Modern Family so whipped up a quick dinner of barbeque chicken, Parmesan couscous, and broccoli.

ImageNow all I need to do is meet my chocolate quota for the day, wash my face, and lay on the couch for the rest of the night. Perfect. Sidenote, I’m going to Boston tomorrow night after work for the weekend–it’ll be my first time there so if you have any suggestions, please throw them my way!

let the baking begin!

Well there’s no more denying it: Christmas is almost here.

Two weeks from today we’ll all be congregating with family, eating honey ham and Pillsbury rolls and exchanging presents under the Christmas tree.  The funny thing about me is that this is my favorite time of the year.  Christmas day isn’t what does it for me.  It’s these weeks leading up to the day that I love the most. It’s when I crave hot chocolate, sitting by a fireplace, and ice skating (getting me to voluntarily spend time outside during sub-zero temps won’t happen any other time of the year). I love shopping for friends and family, turning on Christmas carols, and most of all, baking! And since I’m in the process of changing jobs (more on that later), I have the next three weeks completely free during the day that will undoubtedly all be taken up with Christmas baking!

I already have my sights set on reindeer cookies, German chocolate cake, saltine cracker toffee, Nutella-filled chocolate cookies, and brownies with peppermint frosting. It’s gonna be a sugar-filled, chocolate-infused few weeks, and I love it.

I’m doing my best during the holidays to keep my meals at home normal, so today’s WIAW is nothing extravagant. I save that for my weekends in the city 🙂 I’ll tell ya, the minute I live in the city I’m going to spend all my money on food. It’s a problem.

I started out the day with some exercise: 30 minutes alternating speeds on the stairmaster followed by an upper body workout.

Breakfast

ImageToday’s breakfast was plain Greek yogurt with truvia and pomegranate seeds. I ate this directly after having a protein shake so needless to say I got my day started with a heavy dose of protein. I’m usually not a big fan of eating breakfasts without some form of bread or oats, but this meal had so much protein that it kept me full for hours and hours.

I did a little grocery shopping later in the morning for some healthy items.

Lunch

Lunch was one of my favorite things lately: butternut squash and carrot soup. It sounds kind of funky, but it tastes like cheese. If something can make vegetables taste like cheese, it’s got my vote.  Thank you to my local grocery store for featuring this soup during these cold winter months! Sometimes soup is exactly what you want. I ate two pieces of bread with hummus on the side.

When I got off work at the restaurant I scoured through our leftovers and came up with a chicken fajita.  It’s my Mom’s recipe full of bell peppers, onions, cayenne pepper, and red pepper flakes.  After I snapped a picture this was topped with copious amounts of guacamole to make it even better. Usually I have two fajitas but the protein-heavy day plus a few handfuls of popcorn while I was making it filled me up.

Finally, I can’t end this post without acknowledging a very special person: today is my Dad’s birthday!

WIAW + it’s beginning to look a lot like christmas

I’m officially in the holiday spirit. Sure, I have a bad cold thanks to the lovely winds and quick weather changes that the Midwest so graciously provides each and every year. Yeah, I’m still working doubles almost every day this week. But you know what? It’s beginning to feel a lot like Christmas!

Starbucks transported me into a winter wonderland yesterday, where I got a lot of my work done.  Breakfast was enjoyed with a cappuccino in a holiday cup, surrounded by Christmas jazz, and a background of mini Christmas trees.

ImageNo room for Scrooges here–I’ll get my work done with a smile and enjoy the holiday season as it approaches. After all, it’s always gone before I know it.

Lunch was basically breakfast part two. I think I have an egg addiction…even though my doctor warned me about my cholesterol (successfully making me feel like an overweight, middle-aged Italian mobster) I just can’t get enough.  

ImageLunch was a two egg omelet filled with green and red peppers, onions, cheddar cheese, red pepper flakes, and served alongside veggie sausage patties.  I really need to update my meal rotation.

I had more work to complete throughout the afternoon but of course I made time for snacks:Image

Homemade ginger lemonade (to help fight the cold), no sugar applesauce with tons of cinnamon, and a peanut butter english muffin (sprinkled with chia and flax seeds.  i love me some omega-3s).

Serving was busy as I was up in the bar, but the fact that people seem to get friendlier as the holidays approach helped a lot. I wish people could feel that warm and fuzzy all year long, especially towards their servers 😉

Dinner was eaten at the restaurant while I closed up shop.

Vegan chili (black beans, red beans, chickpeas, and tons of veggies topped with avocado, red onion, and tomatoes). The fact that I made it through this meal without adding cheese or corn bread astonished me too.

I got home just in time for Modern Family to start. I cuddled up on the couch with some cheese, crackers, apples, and peanut butter and called it a night. ((I wasn’t kidding when I said I’m always hungry))

wiaw: hump day pancakes

I went a little nuts today. I made pancakes on a Wednesday.

No, it’s not a weekend and I’m not celebrating anything, I just needed to switch it up. As much as I love my eggs and oatmeal, it was getting a little old.  Plus yesterday’s workout was the toughest workout I’ve done in years. YEARS. I felt like superwoman once it was all over. So I figured pancakes were in order 🙂

If you add it all up, it was 60 burpees, 60 goblet squats, and I ended up doing 314 total of the KB swings and the mountain climbers.  This is the after picture:

Breakfast

I used Kodiak pancake mix, which I’ve heard mixed reviews about.  The ingredient list is amazing– 100% whole grain wheat flour, 100% whole grain oat flour, non-fat dry milk, dry honey, leavening egg whites, and salt. Easy as that. I’ve read that some people find these to be less fluffy than regular pancakes, so I was prepared for these not to come out like a “treat” like most pancakes seem to be.  But in all honesty I thought these were great! I followed the directions exactly and they came out just like regular pancakes (I also added sliced banana to my batter).  Post-picture I drowned these bad boys in some maple syrup. Deeelish.

Lunch

As I’ve mentioned before, work has been crazy lately, so lunch came in two quick parts.

First was a mango-orange chia seed smoothie

I didn’t get to “second lunch” (I feel like a hobbit saying that) until just before my second job, so I ate it fast while watching the series finale of 30 Rock. It took me just over a month but I finally got through all 7 seasons.  It’s such a great show. “Good god, Lemon.”

Very rarely do I make it through an entire day without getting some peanut butter into my life. It should be its own food group.

Dinner

I ate dinner at work once the kitchen closed to customers. Half an order of vegan chili (chickpeas, red beans, and black beans) topped with cheddar, red onions, tomatoes, and jalapenos. Plus one of my favorite treats from work: a jalapeno corn muffin. It tastes like broccoli cheddar soup in cornbread form. I go weak in the knees for that little guy.

In lieu of dessert I was a cheese fiend yesterday, so I had a snack before bed that reminded me much of my time abroad (the Parisians sure do love their cheese plates)

It was a pretty indulgent day. But you know what another word for indulgent is? Satisfying. I went to bed feeling perfect. Eating what you want when you want it is a nice lifestyle to live. It makes me shudder to think my world used to revolve around sugar-free this, fat-free that. That’s not a place I ever want to go back to!

What I Ate Wednesday

As you might expect, meals during the week just aren’t as exciting as those on the weekend.  As much as I’d like to, I just don’t have the time or talent to make as great of food as I’m  blessed to eat when I’m in the city.  Luckily I do a good job of still making dishes throughout the week that don’t bore me or make me crave grease and salt, the way I do on the weekends.  Yesterday was no exception, and I think I did a great job of eating balanced meals throughout the day. Minus the cookies before bed. That was a little overboard

Breakfast

Breakfast was super filling thanks to a lot of different food groups being represented. I’m loving all the color! Whole wheat toast with raspberry jam, scrambled eggs with Parmesan cheese, and a glass of green juice.

I have a big project due tomorrow at work so I’ve been chipping away at that all week. It’s made for a lot of sit-at-the-computer-and-go-into-zombie mode. Definitely not my favorite way to live. If I could never stop moving and going places, that’d be my dream!

This breakfast was eaten pretty early after a workout, so I was hungry mid-morning.

I had this snack around 11 and it hit the spot. It’s been one of my favorites lately! A sweet potato with cinnamon and peanut butter. This is a great snack because It keeps me full for so long.

Lunch

Around 1:30 I started getting hungry for lunch.  I was still swamped with work so I didn’t want to take time to prepare something fancy. You know what that means! Dig through the freezer and see what I can throw in the oven.  The result?

ImageFish sticks!! Am I the only person who still loves these? I mean they’re pretty much just a vehicle for my ketchup obsession but I’ve always  had a soft spot in my heart for fish sticks. This meal reminded me of something we would have had for family dinner as a kid. Except then I’d probably never take that many vegetables willingly 😉

After work I plopped on the couch for some Keeping Up With the Kardashians action. There is nothing better than letting your brain rest by watching that irresistable nonsense. I was a communication major in college and I remember in one of my media classes we learned that often times people will choose media to find an equilibrium for how they spent their day. In other words, accountants might watch ultimate fighting (intensity) while chemical engineers might watch the weather channel (relaxing). Make sense? I always thought that was a cool theory!

ImageI snacked on salted almonds and more green juice while watching KUWTK. It was so relaxing.

I met Zman at the store after he got off work and we picked up the ingredients to make stuffed shells for dinner. This is one of my favorite recipes so I’m not sure why I don’t make it more often! It’s really easy, extremely cheap, and delicious.

Shells stuffed with ricotta, Parmesan, mozzarella, spinach, and covered in sauce. Baked in the oven for 30 minutes or so. We ate this along with a salad with a homemade dressing (olive oil/balsamic/crushed garlic).

I ate this plate plus a two more shells. Then I ate a few Pillsbury chocolate chip cookies because they were there (it’s so so so hard to turn down cookies!). I was absolutely stuffed.

We ended the night by watching New Girl and The Mindy Project, and finally some Modern Family (thank you, USA, for always having this show on). It was a cold and rainy night so it felt good to eat some comfort food and watch funny TV.

Oh and I just had to share one more picture of Megan and Christina’s foster kitten, Samson! I went to visit them on Monday and he is the the cutest thing.

He’s like a little lion 🙂 He just sits and waits for you to settle down then he hops up and snuggles up on your lap. I loveeee this cat.

WIAW

Well guys, I almost forgot it was Wednesday. The days are all blurring together since during the week I usually follow the same routine.

It’s definitely time to shake things up.  

I’ve been looking into volunteer opportunities near where I live or in the city.  I’m not sure how I could fit it into my crazy schedule but last week at church the priest said something that really made me think.

He said “If you’re feeling lost, serve others, and you’ll find yourself.”

Even though I’m still working on finding the perfect path for myself post-grad, I can easily still help people who are less fortunate.  My identity doesn’t have to be based on what I have or what title I’m working towards, but maybe for now I just need to look outside myself and I’ll find the answer.

Between crafting and working it was hard to come up with anything spectacular in the food department, so bear with me. I’m not usually a crafty person so I’m really proud of myself for getting it done!

Overnight oats with chia seeds, almond milk, peanut butter, and cinnamon. I’ve met so many people who don’t have a clue what overnight oats are, and I’ll tell ya they’re really missing out.  You basically prepare oatmeal the night before and instead of putting it on the stove or in the microwave, you put them in the fridge.  I like the way the oatmeal keeps its shape and doesn’t get all mushy.  It’s a lot chewier than standard oatmeal, but for some reason the more texture a food has, the more satisfying it is to me.

Lunch was more like brunch, since I had a few slices of quiche that my mom brought home from a local French restaurant.  It had mushrooms in it (as well as spinach and onion) but they were easily avoidable and I picked them out as fast as I could. No fungi for this girl.

I did some crafting throughout the afternoon–like I mentioned I’ve been wanting to paint a pumpkin for a few weeks now.  Well, it tested my patience but I finally finished.

Dinner

Dinner was nothing special–a veggie burger with cheddar cheese, grilled onion, tomato, and a side of watermelon. You can tell watermelon isn’t in season anymore, but hey, it’s still sweet and refreshing no matter the time of year.

I snacked on a lot of candy at work…it gave me a stomach ache :/ you’d think I would learn my lesson after the first few pieces, but man, I forgot how good Air Heads are!

I went to an early morning bootcamp session so that I’d have time to get all my other stuff done during the day.  Sometimes it’s not the most pleasant to wake up that early knowing a full day of work is ahead of you, but I always feel better once I’ve exercised.

Not the hardest workout overall, but it was pretty tough on my shoulders and hips. We do squats or some kind of squat variation every day (wall balls and sumo deadlifts took care of that today) so my hips are always sore. I’ve just come to accept it as an everyday grievance 😉

I broke it up by doing 5 rounds of 10 reps. I finished in about 16 minutes and ended with a few minutes of jumping rope to make it a full 20 minute workout. Done and done!

Keeping my fingers crossed that this week speeds by–it’s homecoming at my university so I’ll be roadtripping down to campus with my friends to celebrate. It’ll be my first time back since graduation, so I know it’ll be a fun weekend!

It’s that time again! The best day of the week because it revolves solely around FOOD!

Yesterday’s workout was different because we ran a timed mile run as a part of the workout.  We warmed up with  half a mile on the given route (which was quite hilly, by the way) and then quickly took off for the timed portion.  Being the competitive person that I am I tried to keep up with the guy in the front of the pack the whole time…being the wimpy girl that I actually am I ended up falling back to 3rd in the group but finished with a 7:58 time before getting right into the day’s strength workout.

Breakfast

I knew I wanted eggs. The fact that my muscles were burning meant that breakfast needed to be as much protein as possible.

I made a 2 egg omelet filled with parmesan cheese, spinach, green peppers, onions, and red pepper flakes.  Served with two veggie sausage patties on the side. Sorry for the ugly omelet, I definitely overcooked this one.

Lunch

Lunch was fun because I got to try a new product!

Annie’s mac n cheese is great because it’s organic, aka you can pronounce all the ingredients on the side of the box AND it’s in the shape of Arthur characters! I literally threw a fit in the grocery aisle when I saw this stuff. I’m still pretending it wasn’t $4 a box…

So so so good. My mom will beg to differ (she said it was tasteless) but I added a tablespoon of butter and it was delicious!  Plus it is full of protein so it filled me up really fast. If you try this, make sure to cook it for the maximum time it says, or even a minute or two longer.  It took longer than the recommended time to cook.

Dinner

After work I was starving (this is what happens when my lunch is carb city), so I made a really quick meal.  I heated up some breaded eggplant pieces from TJ’s on the stove and served them with tomato sauce and cheese.

Dessert

Dessert went unpictured but it was a slice of my awesome pumpkin chocolate chip bread and some tootsie rolls.  I’m trying to get rid of the tootsie rolls because my parents’ plan is to give them out on Halloween. I say that’s just a gateway candy…what’s next, necco wafers? PENCILS?!  So in a selfless effort to keep us from becoming “that family” I’ve made it my personal mission to eat them all before October 31st. I’m a doll.

In between jobs I did what most people do: watched 30 Rock and deposited cash in the bank. You know, grown up stuff.

WIAW

Hey all! Sorry for the absence yesterday but I’ve been feeling a little under the weather so I basically took the day off from existing yesterday (hello, naps all day).

When I get sick my appetite gets all out of whack, which I’m sure happens to a lot of you.  I always crave really simple foods: bread, peanut butter, cereal, crackers, etc. It’s not the best, but I made it work.

 

So today for my “What I Ate Wednesday”, here are my eats (otherwise known as my “under the weather” eats)

Breakfast

Lunch

La Tortilla Factory whole wheat tortilla stuffed with cheese, black beans, peppers and onions. Enchilada sauce on the side.

Dinner

Veggie chili served on top of sauteed green beans and onions. Topped with pepperjack cheese , tomatoes, and jalepenos.

That chili was not a great idea for dinner so I only had a small bowl and then dug into my Kashi cereal for something a little simpler to make my stomach happier.  Sometimes it’s better to go with your gut (literally) instead of trying to jam veggies/protein in your diet when your body just isn’t feeling it.

Snack

Am I the only person who regularly eats sweet potatoes for snacks or as part of a meal? As long as you think ahead of time (roasting it takes about an hour) it’s a really easy, naturally sweet snack that, topped with peanut butter, keeps me full.  While this was a snack so I wanted to include some protein, I really do love sweet potatoes plain or with just a little cinnamon.  They’re so naturally sweet!

I got to bed early last night in hopes of fighting off this sickness but woke up early to go to bootcamp at 6 am. Surprise, surprise, I got home and I was still sick (and I’m sure the intense workout didn’t help. I’m heading to the doctor now).  Today was a doozy.  Why am I still surprised by this? Bootcamp is ALWAYS a doozy.  But that’s what makes it so fun! It’s always a tough, heart-pounding workout, but no two workouts are ever the same. I love testing my body with each exercise to see how far I can push it.

Personally I have been struggling lately with a lot of these feelings.  That’s the worst, when part of your brain knows it’s absolutely nonsense to feel jealousy/anger/sadness towards people you love, but you just can’t seem to shake the feeling. I know deep down, however, that I am a positive, bright person and my personality from now on will be shaped based on which side of my brain I “feed”. It’s definitely something I’m working on!

WIAW + urban dictionary

Have you ever looked something up on urbandictionary.com? It was one of those sites in high school that we all thought was soooo great because of its hilarious and often inappropriate definitions.

Today’s bootcamp consisted of mostly burpees.  In total, we did about 10 minutes of them nonstop.  (On a separate note, even lifting my coffee mug when I got home was difficult. Sore to the max).

If you aren’t familiar with the exercise, here’s how urbandictionary defines them:

  • Burpee: the most badass form of exercise on the market; targets every muscle and improves explosiveness. Common among inmates.
  • Ex: “I just did 100 burpees in 5 minutes excuse me while I projectile vomit”

Aaaaand just like that urbandictionary takes the words right out of my mouth.

That workout this morning had my body BEGGING for protein, so that’s what I gave it.

Throughout the day I was hard at work on a new project, but in my down time I roasted two small sweet potatoes, topped them with truvia and cinnamon, and snacked away. This was so good! I usually roast them to make fries but I wanted something sweet and this was perfect.

I had lunch later in the day once I got off work (I’m done now around 3:30).  I threw together a black bean/veggie quesadilla and it hit the spot. I even had to run to the store to get salsa but that is the determination I have to fulfill a craving 🙂

Two whole wheat tortillas from La Tortilla Factory filled with 1/2 cup shredded mexican cheese, sauteed peppers and onions, and black beans. Bowl of salsa on the side, duh, since I am the condiment queen.

I ran to the grocery store with my Mom after she got off work to pick up a few things, and by the time we got home my whole family plopped down on the couch to watch Shark Tank.  It’s one of the few shows my family all loves so it’s such a blast to watch together and comment either on how dumb or brilliant people’s ideas are.  Plus this week is ABC’s “Shark Week” (haha copycats) so it’s on every night!

Dinner was simple because we were all so engrossed in Shark Tank.

After dinner I finished off the TJ’s chocolate covered raisins that I bought awhile back. They were great while they lasted! I wasn’t as big of a fan of the yogurt covered raisins or the sea salt caramel butterscotch caramels so I’m pawning them off to my friends and family haha.  That chocolate covered toffee popcorn, however? Oh that didn’t last more than a few days. That stuff was crack

Around midnight I ate a bunch of fruit in bed watching Scandal. I guess I’m getting a little better at the whole “no snacking in bed thing”

considering I used to be quite the midnight cereal killer.

Stupid Labor Day. Even with my clever hump day joke yesterday my days are all kinds of messed up this week.  I completely forgot to do WIAW yesterday! Obviously I can’t just skip out on documenting a day of eats, so here it is.

Breakfast

I already posted a picture of the awesome pumpkin oats I had yesterday, so here’s what I ate for breakfast on Tuesday.

Egg sandwich. Whole wheat english muffin, raspberry jam, and a veggie sausage patty all surrounding 2 eggs with spinach and parmesean cheese. BAM! This never gets old.

Lunch

For the firs time in awhile I was in the mood to take the time for salad prep.  Last summer I was eating salads and smoothies every day. I’ll chalk it up to the weird less-than-summery weather but this year that summer food hasn’t been doing it for me.  Yesterday, however, I brought back an old favorite.

Aaaaand now I remember why it’s a favorite.  Base of romaine and leafy greens, topped with cooked red onions and peppers (chili powder, red pepper flakes, and salt/pepper seasoning), morningstar chikn patty, cowboy caviar corn and black bean salsa from TJs, and avocado. After this pic was taken I drizzled TJ’s cilantro salad dressing all over this baby. Oh boy.

I snacked on chocolate throughout the afternoon (stupid work stress)

Dinner

I have this habit of sneaking vegetables into my dishes.  Some people think it’s weird, I just see it as a) bulking up my food so I actually get to eat MORE and b) a way to sneak in all those invaluable vitamins and nutrients that veggies provide. Win-win!

I cooked up some quinoa pasta (gluten-free), chopped up some broccoli tossed that with the pasta, and then cooked up a few pieces of TJ’s eggplant parm.  Topped with marinara sauce and parmesean cheese. Veggie city.

A few hours later I was hungry again so I ended the night with a really really delicious “dessert”.

ImageEnglish muffin with pb and chocolate chips. So good, especially with a glass of almond milk. (and a few more handfuls of chocolate covered raisins 🙂 )

Crossfit update. WHOA am I sore! My shoulders and back are on fire today! I’m having a hard time figuring out how I’m going to workout today…maybe a simple elliptical workout after my shift at the restaurant tonight. I’m pumped for my next CF experience tomorrow!

Now I’m just sitting here deciding how long it’s going to be before I take part in this madness:

I think I just have to read the ingredient list to turn myself off of buying the pumpkin bagel with pumpkin cream cheese. Or maybe I’ll play dumb and just dive right in to the pumpkin goodness. Yum!
