Weekend happenings

Well it was a jam-packed weekend full of family, friends, and of course tons of food.

The weekend started Saturday morning with another early morning spin class.  I swear to god the classes get harder every week! The instructor keeps upping the resistance so there’s a lot less sprinting and a lot more chugging along up imaginary hills. Needless to say, the small, non-air conditioned room with 30 people sweating up a storm makes for a very “cleansing” workout. No wonder hot yoga is such a good workout!

After spin class I rushed home to jump in the car with my family and go to Michigan for the weekend.

We’ve been going to the same beach area for 19 years now as a family–it’s one of our treasured family traditions.

Unfortunately we hit MAJOR traffic on the way down there.  It was such a bummer and we were all cranky and in need of some good food the minute we hit the Michigan border.

The Blue Plate Cafe is one of our favorite breakfast spots in the area. They always have a million baked goods as well as fresh smoothies and other breakfast creations.

After three cups of coffee with cream (hey, it was vacation!) I settled on a tomato/spinach/pesto egg scramble served with rosemary potatoes.  I also chose a side of cinnamon-raisin bread.

The eggs and potatoes were out of this world! I loved the pesto with the eggs.  You couldn’t see it but you could taste it, so I guess a little really does go a long way! The cinnamon raisin bread was just okay. I wish I had saved my “sweet spot” for something better from their pastry area.

Nom. Their special that day was pistachio chocolate scones.  Too bad I’m not a huge scone fan or I would have scooped those right up.  Pistachio is great in desserts!

I love how it’s a family in the kitchen…so simple and authentic.

Even though it was cloudy we decided to hit up the beach.  I’m thankful that we did because the sun came out later in the day and we all benefited physically/emotionally from its presence.

Sunday played much in the same way, with one exception: a phenomenal dinner!

Red Arrow Roadhouse is without a doubt our favorite restaurant in the New Buffalo/Bridgman area in Michigan.  We have been coming to this same place for years and years and it never disappoints! My brother and dad claim it has the best ribs and while I’m not a big meat eater, I always find something great to eat there.

We started off with the same appetizer that we always get here:

The always-healthy homemade potato chips topped with blue cheese and scallions.

Since I knew ice cream was coming later and I was craving vegetables I went with a side salad and the crab cake appetizer.

The crab cakes were on top of a salad with lemon vinaigrette which was great. I haven’t had nearly as much fish as I usually like to have during the summer months so it was nice to have this treat.

Also worth noting was what happened AFTER dinner.  THIS PIE.

My dad ordered a piece of homemade blueberry pie and it was the most delicious pie I’ve ever had! I think I liked it even more because it wasn’t served piping hot like most pies are.  It was just warm which made it easier to enjoy along with the cold vanilla ice cream. I had to steal a few bites and I’m not the least bit sorry about that.

You can’t come to New Buffalo and not go to Oink’s.  I even have a piggy keychain from the place because I consider myself a devoted follower of their ice cream goodness.

After my family rolled me back into the car we hit the road for our drive home.  It was a beautiful weekend and it was so nice to be able to keep the family tradition alive for another year, even though my brother and I are both 22!  We’re lucky that our schedules all aligned to make it happen.  I even got a little color and didn’t burn like a lobster! Woooo!

Trader Joe’s Love

Who doesn’t love Trader Joe’s?  If you’re reading blogs like mine, I’m sure you’ve not only heard of Trader Joe’s but you probably have a dysfunctional love and obsession with it.

I don’t live very close to one.  Construction has started in my suburb that “promises” it’ll be here in a year, but they’ve been saying that for awhile so I’m not getting my hopes up.  Hopefully I’ll have moved to Chicago permanently at that point and then I’ll be able to walk to one all the time.  The closest Trader Joe’s is about 30 minutes away so it’s sometimes hard to justify driving there when I have 4 decent grocery stores right by me.

On Friday, however, I had the entire afternoon to myself, so I finally decided to make the trek.  I made my list and pumped myself up; to say I was excited was an understatement.

I strolled the aisles for over an hour by myself, eyeing all the cool new products that TJ’s has to offer.  Yes, I know a lot of their products are just normal, everyday things with creative labels, but whatever. Boo to the naysayers.

In honor of this momentous occasion, I thought I’d show you the things that I purchased.  I got some standbys (things I know are delicious), new things that looked delicious, and a hell of a lot of chocolate.

ImageCilantro salad dressing–perfect for Mexican stir frys or salads

Spicy peanut vinaigrette–I’ve actually never had this before but other bloggers seem to love it. It seems like it would make a great addition to a Thai-inspired salad or cold peanut noodle dish.

Parmesan ranch dressing–great dipping sauce for chicken. Also the perfect salad dressing when you’re in the mood for something a little more decadent-tasting.

Eggplant cutlets–absolutely delicious and makes a much healthier eggplant parmesan.

White cheddar corn puffs–Pirate’s Booty, but cheaper 🙂

Ginger cat cookies–Dad’s favorite!

Aioli Garlic Mustard Sauce–we used this sauce when I was in DC to make a homemade salad dressing. Paired with balsamic vinegar and olive oil it was simple but so flavorful.  It reminded me a lot of the standard salad dressing in Paris.  We all loved it!

Basil Pesto–because you can never go wrong having pesto in your pantry.

Mango chunks–I’ve already added these to plain greek yogurt and they’re so yummy.  Plus they’re relatively inexpensive and will last a long time in the freezer.

Spinach and Kale Greek Yogurt Dip–this caught my eye in the store and (confession) 24 hours later it’s already halfway gone. SO GOOD. If you go to TJ’s you MUST buy this stuff!

Just Almond Meal–I’ve been looking to make some new recipes with almond meal instead of flour. My brother has a wheat sensitivity so I figured it couldn’t hurt to try a few new dessert recipes with this stuff, especially since other people have had a lot of success with it.

Roasted gorgonzola crackers–already tried them with the spinach dip. They’re great!

Cowboy caviar–I can’t wait to give this a try. It seems like it would be a great addition to a taco salad or simply as a snack with tortilla chips. It looks much more filling than regular salsa.

TJ’s bold and smoky bbq sauce–I love Sweet Baby Ray’s to the ends of the earth, but I just can’t get the thought of all its high fructose corn syrup out of my head. I’ve been trying to find a nearly identical replacement, so I decided to give this one a try.

TJ’s cold brewed coffee–Well right off the bat I can’t tell you how much money I’ll be saving with this stuff. It’s smooth, bold, and makes perfect iced coffee. The bottle alone was only around $3 and it’ll make me a week’s worth of iced coffee. Starbucks eat your heart out!

And last but certainly not least: the CHOCOLATE! 🙂

Milk chocolate covered toffee popcorn–NO WORDS. indescribably amazing.

Sea salt butterscotch caramels–I haven’t opened these yet but I’m hoping they taste as good as they sound! Lovvvvve me some sea salt caramel.

Yogurt and chocolate covered raisins–pretty standard, but I love these kinds of raisins so I figured why not! Also I’m planning on making my own trail mix this week so these will make a great addition.

Well that’s the list! As usual I came home with a diverse bunch of groceries from Trader Joe’s to try, as well as my regular purchases. And as usual, TJ didn’t charge me an arm and a leg.  Successful Friday to say the least!

Recent Music: Katy Perry

I could go on for an hour about how much I love her, but I’ll save you all some time. I love Katy Perry.

I’ve been lucky enough to see her in concert once and I’ve seen her concert movie, and after those experiences I can definitely say that she seems like one of the most genuine, nice, and down-to-earth singers.  Everything she sings about is either happy, catchy, or inspiring.

Watch this music video and tell me she doesn’t seem like the coolest person.

Hahaha I love it. She even brings “Kathy Beth Terry” onstage (her sister dresses up as her) at her shows.

“Teenage Dream” has been my favorite song for a few years.  It reminds me of my freshman year of college, dancing and singing around in my dorm room with my friends.

And “Firework” inspired so many people to be true to themselves, in the least cliche-way possible. You should see the YouTube videos of people reacting to this song.

I just love love love her and have decided that this weekend is going to be a Katy Perry on repeat weekend 🙂

I consider myself a well-educated person and am a frequent CNN-watcher and HuffPo-reader, but the Middle East has always baffled me.  It’s not something that’s easy to understand, but I think it’s so important to put effort into knowing world news.  So much has been going on recently with Assad’s regime and current rein of terror in Syria, and even if you’re not going to dedicate hours to learning about the Middle East and the history of its many proponents, at least read this short Washington Post article. It’s a short, smart piece that is pretty informative!

Recent purchase: Primal Fitness Bootcamps!

I just purchased an unlimited monthly membership to a new fitness program that is opening up in my area called “Primal Fitness Bootcamps”. It’s Crossfit-inspired bootcamp that I think will really kick my workout game into high gear!  It opens next week and I can’t wait to get started!

I found this awesome jewelry holder on Etsy that I absolutely adore. I have tons of necklaces but have no place to put them all! Oftentimes they just end up tangled in the bottom of my purse or something. Still debating if this is worth the price or not.

I’m heading to Michigan for a family vacation this weekend.  We go every year and I always look forward to this beach vacation close to home.  I hope everyone has a great Labor Day weekend!  Yay for a day off!

Frozen yogurt + the flower dilemma

Yesterday was a busy day!

You know how sometimes work just creeps up on you and all of a sudden **bam** you’re overwhelmed? Luckily I have coffee, snacks, and an insatiable need to sweat to keep me sane during busy times.
 
Breakfast today was so good!  I’ve been over hot foods lately thanks to the heat wave taking over the midwest, so a big bowl of cereal with fresh fruit and cold almond milk sounded perfect.

Look I even got all artsy! You know you’re a foodie when you take the time to arrange your food so it looks good.  I had 1 cup of vanilla graham kashi cereal + half a banana and a handful of Michigan blueberries.  I drowned it all in almond milk while I went over my work for the day.
 
I did hit up the farmers market this morning after a visit to the gym (strength workout + 8 minute abs + 30 min elliptical workout).  There were some cool new finds there that I just had to snap some pictures of.

Peppers on peppers on peppers.  Anyone watch “Orange is the New Black”? That scene where Piper has to eat poblano peppers (or were they jalapenos?) was the craziest thing ever! I mean at the very least I’m sure she didn’t have any sinus problems for awhile.

And of course some beautiful flowers! Flowers are such a dilemma.  They’re gorgeous and brighten up my day (and any room I put them in!) but they’re always expensive.  Plus, they just die three days after you buy them.  Believe me, I’ve had this argument with Zman many a time…they seem like a pointless gift. But there’s just something about flowers that makes everything better 🙂 They make what otherwise would be a monotonous day, special!
 
Wait–back to the title of this post.
I went to Lincoln Park last night to visit Megan for an outdoor yoga class. Well, long story short, we walked right past the class and marched into a frozen yogurt shop instead. Oh well, it was a long walk, right? 😉

Breaking news: I may have found the best frozen yogurt in Chicagoland.
 
Forever Yogurt was exactly what a froyo place is supposed to be: over a dozen flavors, tonnnnns of toppings, and SAMPLE CUPS.  There is nothing I hate more than places without sample cups.  Look, I get it, high schoolers come into your store, eat their body weight in samples and then walk out.  But I’m a 22 year old woman with a serious decision-making problem so if you’re going to ask me to pick a flavor without sampling them all first, you’re nuts.

After my sampling, I settled on pistachio cream with praline almonds. I went simple (which never happens) and it was less than $4 (which NEVER happens) and I left feeling satisfied, not sick with oreo/cookie dough/sprinkle overload.

Megan and I spent the rest of the night drinking Pinot Grigio and talking.  It was so refreshing to just sit and talk with a good friend.  A wonderful night!

WIAW

I woke up early to run before the humidity that has been haunting Chicago set in.

Surprise! It was still disgusting out.

I did manage to make a pretty good Miley Cyrus VMA impression, though.  Sadly no twerking.  Twerking and running just don’t mix.

I only ran 4 miles but you would think I had never run before. It was just one of those days. Taking time off from running in the worst because once you start getting back into it, you have to rebuild your strength and stamina.  Lead legs FTW.

One amazing thing that I did stumble upon during my run was this pumpkin plant that my neighbor is apparently growing:

Here’s what my eats looked like yesterday:

Breakfast was an omelet–2 eggs, red and yellow peppers, salsa, cheddar cheese, and veggie sausage.

I snacked on a ton of blueberries all day.  Those things are like crack! I could sit there and eat pint after pint without giving it a second thought.

For lunch I tried to recreate a restaurant favorite of mine: the tuna melt!

I figured that minus the buttered bread and heavy mayo/cheese, my creation could be semi-healthy.

I added some sliced tomato and toasted the whole thing under the broiler for about five minutes.  Served with ketchup (of course) this was almost identical to my favorite sandwich shop.  I loved it! Comfort food in the middle of the day is the best.

Halfway through the afternoon I really started to feel the early morning run, so I went to Starbucks and got an iced coffee with soy milk.  Is it just me or have the sizes gotten smaller? The venti used to look ginormous to me but now it just looks pretty normal.  Is that just the American in me overestimating the right serving sizes, or maybe now that I’m older things are just shrinking in my eyes? Haha

Dinner was my go-to lazy meal.  After my shift at the restaurant I didn’t feel like doing much so I toasted a whole wheat bagel thin and topped it with chia seeds, chunky pb, and banana slices.

I’m going to a yoga class out in a park tonight so I’ll definitely have a recap for you on how that goes.  I love Lululemon!

Never stop moving

If you ask any of my friends they’ll tell you: I’m a girl who never stops moving.

It can be infuriating how fidgety I get if I’ve been sitting too long, and I’ve been known to turn casual “sitting on the couch” hang outs into small workouts (“hey guys, lets see who can hold our legs up the longest!”)

One of my favorite ways to get moving is to take walks after meals.  Not only is it great to step away from the laptop/cell phone and get outdoors, but it makes me feel so much better, especially if I’ve just eaten a big meal.

I’m not alone in this way of thinking. According to a recent article in the New York Times, a walk as short as 15 minutes post-meal can help aid with digestion and improve blood sugar levels.

Luckily I’m pretty persuasive so I can usually convince someone to take a stroll with me 😉 Sunday night was no different:

You’ll have to forgive the lighting…summer nights are leaving us faster than normal this year.

My dad and I set out for a 20 minute walk yesterday after dinner.  We had just had our first family dinner in awhile (it’s hard to get 4 working adults to sit down at a table together): a BLT bar!

Crusty, toasted Italian bread, cool veggies, and crispy bacon. Now I haven’t had bacon in years (I never eat red meat and rarely eat pork) and while it looked and smelled so delicious that I couldn’t turn it down, my stomach did not agree with it later in the night. Looks like I have to try tempeh again….or maybe turkey bacon?

My dad and I went on our walk and talked about everything from mortgages to lunch breaks at work.  It made me realize that not only is walking after meals good for your physical health, but it was a wonderful emotional break.  We were able to step away from the devices that distract us constantly and simply focus on two things: walking and each other.

When I got home I quickly snagged one of these cookies my mom and I picked up at the grocery store:

Goodness gracious they are soooo good.  So airy and chewy and sugary–three of the best things in a dessert!

My Monday was pretty boring, as Mondays tend to be.

It started out with an early morning weights/stairmaster workout before work.

Dinner is unpictured because it was chili that I ate at work at the end of my shift… I was just too hungry to wait until I came home haha.

But even more exciting than dinner was dessert!  Along with a handful of chocolate covered almonds I tried a new purchase: chocolate covered bananas! I guess you can say I like chocolate a little bit.

Today is another hot day in Chicago! Luckily I’m working from home so I don’t have to worry about melting like the wicked witch of the west on my walk to work.  I hope you all have a fabulous day!

Megan’s birthday in the city!

Saturday was full of birthday shenanigans (the best kind of shenanigans, of course).

Before I went downtown to spend the day with Megan, I hit up my regular 8am spin class and came home to these beauties.

ImageCherry walnut pancakes a la Dad. We have so many sweet cherries from the farmer’s market so my dad decided to whip these up for breakfast.  I ate pancakes on the back porch with my parents and it all made for a beautiful morning.

After some typical Chicago traffic I was in the Lakeview neighborhood and ready to enjoy the day. The weather was perfect, breezy and mid 80s, so Megan and I decided to walk to a coffee shop nearby that I’d heard of.

ImageThe Coffee and Tea Exchange has been open in the East Lakeview neighborhood since 1975.  They offer tons of freshly roasted coffee from all over the world, all on display in barrels that you are encouraged to observe and smell. They offer every kind of Torani syrup known to man and have daily specials including “Rose latte” along with plenty of other creative concoctions.

After a lonnnnnnnnng decision-making process, I chose salted caramel syrup (next time I’m coming for you, french toast!) I had a salted caramel iced coffee with soy milk. It tasted like a dessert!

Megan picked the rose latte, which I took a curious sip of, and it tasted exactly what you’d think a rose would taste like. It was not overpowering like I’ve found other rose-flavored desserts to be.

We took our coffee to go and walked the streets of East Lakeview. Megan and Christina just moved to the neighborhood so it’s been fun to explore with them.  Our walk took us to Wrigley Field, and of course I had to snap a pic.

We grabbed some rental bikes near the lakefront afterwards and took the path from Lincoln Park all the way to Museum Campus, passing Navy Pier and North Avenue beach along the way.

Contrary to this picture, the path was packed! It took us an hour to go less than five miles and we spent most of the time dodging runners and walkers, but regardless it was still a beautiful trip along Lake Michigan.  The lakefront path is my favorite place in Chicago (although I suppose it’s not really a “place”, but I don’t know if you could find a more beautiful and scenic route in any other city).

When we got back to their apartment I gave Megan her presents.

Blue Moon, cookie cake, and flowers.  Such grown-up gifts. I remember when a birthday present meant a Jesse McCartney card and a new t-shirt from Aeropostale.

We were absolutely exhausted from all the walking and biking so we knew we could only order one thing for dinner:

Lou Malnati’s while watch Tosh.0.  You could be having the worst day in the world and Tosh.0 will have you rolling on the floor laughing. I loveeeeee that show.

Between the deep dish pizza, cookie cake, and beer, it was a really healthy night 😉

Later we went out for a few hours to celebrate.  Even though we couldn’t stop talking about how crazy it is that this year we’re all turning 23 (Megan and I have been best friends since we were 14), we agreed that we’re looking forward to the years to come, when hopefully we get things a little more “figured out” 🙂

I love these girls like sisters and while our birthday celebration was nothing like turning 21 (haha), it was a nice night out with friends.

a little bit of me, recently

Hey guys! Just checking in with you all on this lovely Friday evening.  As usual I’m going to end the week with some of the things I’ve been loving recently.  Music, food, workouts…whatever stands out from that week.  Have a great weekend!

Recent music: I’ve been loving music all about being BRAVE!

Plus this absolutely beautiful song by Miranda Lambert. A great reminder that this world is made up of ALL kinds of people and it keeps spinning because of that variety…it’s nothing to be scared of or made uncomfortable by. That’s the beauty of the human race!

Recent workouts:

I’ve been having a lot of knee pain lately (which is why runs have been minimal) so I’ve turned to bootcamp workouts instead.  I’m looking to invest in a bootcamp membership next month simply because I love the way they make me feel–powerful, strong, and agile.  There’s a new bootcamp opening up in my town so I think it’d be really fun to be part of something from its beginning.

The other great part about these kinds of workouts?

They can be done in the comfort of your home!

I did a free workout on Hulu that I’ve loved for a few years now–it’s part of the “Rock Hard Body” series and it’s a 40 minute workout called “Body by Jake”. I highly recommend it if you’re having one of those days when you don’t want to drive to the gym.

Recent eats: Oh so many. I’ve been eating like a queen lately.

This little sucker cost me $5 at the airport in Washington D.C. I was stress eating after our plane wouldn’t take off and we all had to get off for them to fix the engine. Terrifying. This was the healthiest choice I could find, and I really do love pistachios!

Since I take such an early train into the city, I’ve occasionallybeen bringing breakfast to-go.  This was oatmeal with bananas, peanut butter, and chia seeds. It was so hearty and filling.

Avocado toast is the bomb.  I know so many people who don’t like avocado, and it kills me because I know that if they just sprinkled some sea salt on it they’d change their minds.  Guys, avocado without sea salt is just paste. Avocado WITH sea salt is bliss. Toast, avocado, sea salt, tomato, and thinly sliced swiss cheese.

Using up all those peaches from the farmer’s market has been a breeze. This snack got heads turning at the office this week, and with good reason.

I love my lemon desserts and this one takes the cake. Very rarely do I say a “health bar” can take the place of an actual dessert, but I’d pick this over a lemon bar any day.

I worked my booty off at the restaurant this week, and just knowing that these tilapia tacos were going to be on special tonight was enough to get me through it all.  Breaded tilapia and remoulade smothered in our jalepeno-mango coleslaw. Gah this was the best thing I ate this week.

Jalapeno popper diplicious (recipe)

I’ve always seen “jalapeno poppers” listed as appetizers at restaurants, but they never struck me as appealing.  I usually breeze right past them and look for the nearest spinach-artichoke dip or fried pickles.  Call it “wisdom with age”, but I used to think jalapenos were gross just because of how they looked.  The same has happened to me with onions and coffee as I’ve grown up. Two foods that I couldn’t stand growing up are daily staples in my diet today (you can get this in writing, though: I will NEVER like mushrooms).

One day at the restaurant one of the chefs put jalapenos in my grilled chicken sandwich on accident, and being the “avoid conflict at all costs” type of girl that I am, I didn’t say anything.  However, after the first bite I realized: jalapenos are AWESOME! They gave the sandwich a spicy kick that took it to a whole other level.

Later that night I stumbled (ironically) upon a recipe for jalapeno dip.  I took that as a sign from above and decided to tweak it and bring it to movie night with my friends a few weeks ago.  It was a hit!

So if you’ve never tried jalapenos before or just love jalapeno poppers and want to try out an easy alternative, this is the recipe for you. The abundance of cream cheese and greek yogurt cools the jalapenos down and together they strike a perfect balance of hot and creamy.

Jalapeno Popper Diplicious

  • 2 8oz packages of cream cheese
  • 3/4 cup light mayo
  • 1/4 cup plain greek yogurt
  • 2/3 cup shredded cheddar cheese
  • 1 1/2 cup shredded parmesan cheese
  • 1 4oz can of green chiles, drained
  • 5 jalapenos diced (less if you don’t want it as spicy)
  • 3/4 cup panko bread crumbs

Set oven to 375 — mix all ingredients together and top with the bread crumbs.  Bake for 25 minutes and serve immediately.

**Make sure to serve it right away, because once it starts to cool down it gets hard to scoop up with chips

**Serve with potato chips, pita chips, crackers, etc.  We had ours with pita but I think it’d be better with normal potato chips or crackers because of the saltiness.

WIAW

It’s time for my first official “What I Ate Wednesday”! Since I’ve started reading healthy living blogs, WIAW have been some of my favorite posts.  Now don’t get me wrong, a blog listing every morsel of food eaten throughout the day would definitely get repetitive…but there’s something fun about following another blogger’s food chronicle once a week.  (It’s funny, ask anyone on the street if that sounds like something they’d want to read and they’d vehemently say no…we healthy living bloggers are an unusual bunch).

As most bloggers do, these are my eats from Tuesday.  I hope they inspire you to squeeze as many colors into your meals as possible (and to push social norms as to how much chocolate is acceptable to eat in one sitting).

I woke up bright and early at 4:45 am to fit in a workout before work.  I hate to pat myself on the back, but that’s some dedication right there. I miss Spring when the sun came up at 5am and it made workouts inspiring, not frightening.

This is the face of 4:45am. It’s not pretty, and neither is the cold, black, dark, menacing sky in the background.  Dramatic I know 😉

I went to a much-needed Vinyasa Yoga class.  At first I was getting super annoyed with the moaning and groaning going on (that kind of stuff makes me uncomfortable), but towards the end I realized that’s the point. If you’re going to go to yoga and not take deep breaths and actually release your stress and anxiety, then you’re missing out on the beauty of the practice.

I enjoyed a monster cup of coffee on the couch for a few minutes when I got home.

Breakfast was eaten on the fly.  Luckily I worked from home yesterday, but I still had to be ready to work at 8:30 so my time was limited.

This baby needs no introduction.  The only difference was that I had it on a whole wheat bagel thin instead of an english muffin.  The jury’s still out on which I prefer.  2 eggs, tons of spinach, parmesan cheese, a little raspberry jam and a veggie sausage patty.

My mid-morning snack was two peaches while I worked away.  Yesterday’s work ended up being pretty extensive and I spent close to six hours staring at Excel. Joy.

Luckily I had my fully stocked kitchen to make lunchtime a little more exciting than it has been lately!

Tuna salad sandwich on Ezekiel bread topped with tomato and leafy greens. Side of grapes (multiply that portion a few times haha).

My afternoon snacking was not the best. I was pretty drained from work and I responded by eating FAR too many chocolate covered almonds. I won’t even say how many times you should multiply the portion in the picture to get a real idea of what I ate…let’s just say it was nuts 😉

I usually portion things out.  Handfuls are the worst! I always underestimate how much I’ve had until it’s too late and I’m stuffed with things like chocolate, cereal straight from the box, peanut butter spoons, etc. Such weaknesses.

Luckily all that sugar powered me through a crazy shift at the restaurant. It was dead for close to three hours (aka I got out of my “waitress groove”) and then all of a sudden it was a mad rush.  I was still home at a decent hour with a salad in hand.

ImageVery rarely do I want to make my own dinner after a long shift.  Good thing they have a great selection of healthy food (as well as a killer shrimp po boy and fries mmmmm).  I walked away with a mexican salad: grilled shrimp, jicama, black beans, peppers, avocado, and a mango-lime dressing. It was delicious and decently filling (I had a banana afterwards).

I had a lot of work to do before I actually went to sleep, so I was hungry again just before bed.  I threw together a quick snack to eat in bed while talking on the phone to Zman. Midnight snacks are the best.

So much great food in one day, huh? It makes me so happy when I have enough time to fill my day with such thoughtful meals and snacks.  I appreciate it when those days happen!
