what i ate wednesday

I cooked like a downright housewife yesterday.  It was a delicious day and I enjoyed it because lord knows I have time to brainstorm/prepare/cook recipes once a millennium.

Breakfast

Honey Nut Cheerios, flaxseed, and a banana with almond milk

Next was my workout for the day, which was crazy and involved a move that made me feel like Spiderman.

It’s hard to visualize, but wall climbs look like this: start in a push-up position with your feet against a wall.  Push yourself up and then move your feet up the wall behind you and walk your hands as close as you can to the wall.

This picture does a good job showing the different stages of the workout.  It’s VERY difficult and even though I could barely move my arms to the wall, my arms and back are really feeling it.  The best part is that you can do this at home.  All you needs is a wall, so no excuses 🙂

I came home and literally dove head first into a few cups of coffee (with pumpkin coffeemate…I know, such a vice)

The coffee did a good job powering me throughout the workday.  I had a few projects to finish up, so I was busy all day.

Lunch

I made a tuna sandwich with sliced tomatoes and served it alongside a cup of artichoke soup.  I purchased the soup from the farmers market at the urging of a local vendor, and it didn’t disappoint! It was made with artichokes (first ingredient, always a good sign), chicken stock, onion, a little lemon, and cream cheese (weird but it helped make the soup really creamy).

Snacks were nothing out of the ordinary. I enjoyed a couple of my favorites throughout the afternoon.

IMG_3417A roasted sweet potato and a spoonful of peanut butter with chocolate chips. It was sugar city but luckily the pb and sweet potato did a good job keeping me full until dinner.

Dinner

I had the night off from the restaurant so I headed to the city to make dinner with Zman.  We went to the grocery store and came up with a recipe that we thought we’d both enjoy (we don’t like many of the same foods except pizza haha so sometimes it’s tricky).

We came up with caprese chicken, garlic bread, and roasted green beans.  It was one giant experiment so I think I used more oil/butter than necessary, but hey, now I know (plus it was extra delicious).

Dessert

As if I didn’t get enough sugar already during the day, we decided to buy a giant tub of vanilla ice cream.  I had a few spoonfuls along with some animal crackers and pieces of dark chocolate. Zman doesn’t believe in bowls. He also didn’t want to be featured on the blog so he decided to go incognito. It totally worked.

I was a hungry monster yesterday–blaming it on those wall climbs.  Spiderman tricks require superman fuel, right?

Also, I have to dedicate this post to my friend, Spencer, who just can’t seem to wrap his head around What I Ate Wednesday posts. I hope he can get over the scandalous revelation that these are actually Tuesday’s eats posted on Wednesday and go back to being an actuary and properly estimating people’s insurance rates (good guess, right?). Let’s stick to what we know, Spencer. Yeah?

Shrimp Creole (recipe)

I know I’m a day late for a “Meatless Monday” post, but it’s never a bad day to share a recipe, right?

If you’re new to the game, here are some reasons to go Meatless on Mondays:

  • Limit cancer risk: diets high in fruit/veggie consumption may reduce cancer risk. Red and processed meat consumption are linked to colon cancer.
  • Reduce heart disease: recent data from a Harvard University study found that replacing saturated fat-rich foods (meat and full fat dairy) with foods that are rich in polyunsaturated fat (vegetable oils, nuts and seeds) reduces the risk of heart disease by 19%.
  • Fight diabetes: research suggests that higher consumption of red and processed meat increases the risk of type 2 diabetes.
  • Reduce your carbon footprint: The United Nations’ Food and Agriculture Organization estimates the meat industry generates nearly one-fifth of the man-made greenhouse gas emissions that are accelerating climate change worldwide (far more than transportation).  Reducing in meat consumption once a week can help slow this trend.

Sure, statistics and studies change over the years.  But no matter what you think about meat, you can’t argue that focusing on fruits/veggies/legumes for ONE day a week is great for your body.

This recipe, while it does contain shrimp, is a great recipe that is focused around veggies. Many people debate whether or not fish is “meat” and are outraged that some choose to include it even when participating in Meatless Mondays.   I say do what you want. I personally don’t count fish as meat.  If you’ve been reading this blog for a long time, you know that I never eat red meat (never have) but do eat white meat, fish, and eggs, so this day isn’t a huge challenge for me.  I can imagine, however, that if you’re a big burger, steak, or fried chicken eater, having grilled shrimp or wild salmon on Mondays would be a huge change, and your arteries would thank you greatly.

So if you’re looking for a meal that is simple to prepare, easy to make (hello, crock pot), and gives you a break from your meat-eating ways, I definitely suggest shrimp creole.  And if you think shrimp is a deal-breaker when going meatless, leave it out! There is so much flavor in the creole as it is that I’m sure it’d be great alone.

All in all, let’s make these guys happy once a week:

Shrimp Creole

  • 1.5 cups chopped onions
  • 3/4 cup chopped celery
  • 1 glove garlic, minced
  • 3/4 cup chopped green pepper
  • 1  28 oz can crushed tomatoes
  • 2  8 oz  cans tomato sauce (or 1  15 oz can)
  • 1 tsp salt
  • 1 tsp sugar
  • 1/4 tsp pepper
  • 1 tsp paprika
  • 1 bay leaf
  • 4 drops tabasco sauce (or more if you like it spicy like I do!)
  • 1 lb cooked shrimp, shelled and deveined (If frozen, thaw and rinse)

Combine all ingredients except shrimp in crock pot and stir.

Cover and cook on Low 7-9 hours (High 3-4 hours)

During the last 15 minutes, add your shrimp until they are warm. Don’t leave them in there too long or they’ll turn into little hockey pucks, since they’re already cooked.

(If you use shrimp that is not already cooked, add it in the last hour on High, and make sure they are pink before you stop cooking the creole).

Serve over brown rice and enjoy!

weekend + tabata day

Today was one of those workouts that seems easy but ends up kicking your butt.

It was tabata day! Tabata training is where you alternate high intensity exercises and short breaks.  This kind of workout took me awhile to get on board with.  I’ve been a believer for most of my life that the longer you exercise, the better.  I figured 60 minutes on an eliptical watching Sex and the City reruns was the way to go, and laughed when I saw infomercials for workouts that would get you your dream body in only 12 minutes a day.  It just didn’t make sense to me.  Nowadays, I’m much happier working out for 20-30 minutes a day sweating my butt off the entire time.

The basic outline for a tabata workout is:

  • 4 minutes long
  • 20 seconds of intense exercise
  • 10 seconds of rest
  • Repeat 8 times for a total of 8 rounds

We had 5 exercises to complete so the whole workout was 20 minutes long. Also, we were only allowed to record our lowest score (so even though I thought I was a badass and started with 13 pushups, I had to record 7 because by the 8th round my arms were crying uncle. No one will ever know of my initial glory. Except you fine folks, of course 🙂 )

Aside from my arch-nemesis “the pull-up”, this was very doable.  By the end we were all groaning on the floor, but isn’t that what a good workout should look like?

The best part about tabata training is you can do it anywhere–a hotel room, park, living room, etc., and it doesn’t take up too much of your day. If you want to give this workout a go at home, just replace the pull-ups with another activity like jump roping or mountain climbers–all you need is a stop watch, some loud music, and determination to get it done.

Weekend

A few pictures from the weekend–it wasn’t the healthiest. Not by a longshot. Our crazy girls weekend didn’t go as planned (Megan sprained her ankle on Thursday) so we ended up moping around her apartment which led to not-so-great food decisions. The highlight was definitely the turtle races. Even though they still scare me…

As you can see, fall has finally arrived in all its crisp-air, crunchy-leaf glory! I spent the last few hours of the weekend outside by the lake and it was beautiful.

Today or tomorrow I’m going to try a new recipe for cheesy cauliflower and grilled chicken–if it works out, I’ll share it soon!

markets, cheese, and turtles

I love today because I don’t have work! Wooo! Three day weekends are the best, aren’t they?

I’m heading down to the city soon for a girls weekend but I just had to share some pictures from my town’s last farmers market of the year.  I haven’t been there in a while so it was cool to see how all the goods have transitioned with the seasons.  It really shows you the authenticity and goodness of all the farmers’ products: they bring what they grow that’s in season and will truly taste the best.  

Instead of raspberries and tomatoes we saw a ton of apples, squash, gourds, and pumpkins.  Plus lot’s of “cozy”  foods such as artichoke soup and hot cider. Those things warm my heart 🙂

Breakfast was a two-parter (my favorite because it means more food!)

First was a mango smoothie (oj, greek yogurt, frozen mango chunks) with chia seeds. I loved the way the chia seeds look in a smoothie–plus the added crunch was nice.

Why did I need so much food, you ask?

This. Workout.

There was a 30 minute time cap for this, but no one got even remotely close to completing ten rounds. It was brutal! I got through 7 complete rounds, and the constant movement meant for one of the sweatiest, most exhausting workouts I’ve done in awhile. ((You know 10 minutes after I got over the whining I had an endorphin high like no other. Thank you, exercise))

Now I’m planning on heating up some leftovers from dinner last night.  It was a mammoth sized quesedilla that I couldn’t dream of finishing, as it was jam-packed with cheese, chicken, black beans, and veggies, not to mention I could use it as an umbrella if I held it above my head (but, really, who is going to turn down that much cheese-filled deliciousness?)

Yeah this is only half. I consumed this while catching up with last night’s Scandal episode (it’s my favorite show of the fall, with Nashville coming in close second)

Now time to get ready–I’m going to a turtle race tonight. Yep, you heard that right. I’m definitely going to bet my money on whichever one is most motivated by food, as I firmly plan on holding a mozzarella stick at the finish line as my turtle’s motivation.

ginger lemonade (recipe)

The first thing I felt this morning when I woke up was …… sniffles

Call it allergies, call it the start of the plague, but I know something is up.

I feel great otherwise so I know that the best thing to do is take all preventative measures to stop this thing dead in its tracks.  This usually includes a lot of water-drinking, antioxidant-eating, and laying horizontal for as long as possible.  Since I have two jobs and no time to test out the “Don’t bother me I’m laying here to prevent myself from getting sick” theory, I’m stuck with the home remedy approach.

I’ve often heard that ginger helps a laundry list of illnesses, including upset stomach, muscle pain, and congestion.  It’s no coincidence that whenever I used to feel under the weather at school I used to go to the coffee shop where I worked and pick up a “Ginger Dragon”, a steamy drink that soothed my sickness and my soul.

Now that I’m home and sick season is approaching, I figured I’d try to make my own concoction to keep in the fridge for days like today when I want to drink lots of fluids and feel all the great benefits of ginger.

It actually came out great! It might seem like a hard recipe because, really, who buys ginger root?  But it’s very simple and I’m already feeling better, so bookmark this if you feel like you’re coming down with something.

Ginger Lemonade

  • 1 large ginger root (about the size of a standard book)
  • 3 lemons
  • 1/2 cup honey
  • 6 cups of water
  • 1 gallon pitcher

First, boil your water in either a tea kettle or on the stove.  While this is heating up, rinse your ginger root thoroughly and then simply chop it up into pieces (no method here, just in 1 inch pieces or so, nothing that won’t be stopped by a colander).

Place the pieces of chopped ginger into a glass bowl (make sure the glass is durable and room temperature so it won’t shatter!) and pour the hot water over the ginger.

Let the ginger steep in the water for 30 minutes.  Drain the mixture through a colander to get all the ginger pieces out.  You should now be left with ginger-infused water.

The water should still be warm at this point.  Squeeze the juice of all three lemons into the water and then slowly add the honey, making sure to stir so it melts into the water.  You can always microwave the water again if you need to in order to help the honey melt.

Once the ginger water, lemon juice, and honey are all mixed together, pour it in a one gallon pitcher.  It won’t be full, so just add cold water until the pitcher is filled up.  Stir the whole thing and then store it in the fridge.  Remember, it’s all about what your taste preference is.  Mine turned out just the way I like it, but you might want to add more honey or dilute it with even more water. It’s totally up to you!

I’m drinking mine chilled now but it’s also great as a hot drink, especially when you have a full-blown cold. Something about the mixture of honey, lemon, and ginger is comforting and cleansing.

It’s that time again! The best day of the week because it revolves solely around FOOD!

Yesterday’s workout was different because we ran a timed mile run as a part of the workout.  We warmed up with  half a mile on the given route (which was quite hilly, by the way) and then quickly took off for the timed portion.  Being the competitive person that I am I tried to keep up with the guy in the front of the pack the whole time…being the wimpy girl that I actually am I ended up falling back to 3rd in the group but finished with a 7:58 time before getting right into the day’s strength workout.

Breakfast

I knew I wanted eggs. The fact that my muscles were burning meant that breakfast needed to be as much protein as possible.

I made a 2 egg omelet filled with parmesan cheese, spinach, green peppers, onions, and red pepper flakes.  Served with two veggie sausage patties on the side. Sorry for the ugly omelet, I definitely overcooked this one.

Lunch

Lunch was fun because I got to try a new product!

Annie’s mac n cheese is great because it’s organic, aka you can pronounce all the ingredients on the side of the box AND it’s in the shape of Arthur characters! I literally threw a fit in the grocery aisle when I saw this stuff. I’m still pretending it wasn’t $4 a box…

So so so good. My mom will beg to differ (she said it was tasteless) but I added a tablespoon of butter and it was delicious!  Plus it is full of protein so it filled me up really fast. If you try this, make sure to cook it for the maximum time it says, or even a minute or two longer.  It took longer than the recommended time to cook.

Dinner

After work I was starving (this is what happens when my lunch is carb city), so I made a really quick meal.  I heated up some breaded eggplant pieces from TJ’s on the stove and served them with tomato sauce and cheese.

Dessert

Dessert went unpictured but it was a slice of my awesome pumpkin chocolate chip bread and some tootsie rolls.  I’m trying to get rid of the tootsie rolls because my parents’ plan is to give them out on Halloween. I say that’s just a gateway candy…what’s next, necco wafers? PENCILS?!  So in a selfless effort to keep us from becoming “that family” I’ve made it my personal mission to eat them all before October 31st. I’m a doll.

In between jobs I did what most people do: watched 30 Rock and deposited cash in the bank. You know, grown up stuff.

Chocolate Chip Pumpkin Bread (recipe)

Hey guys!  I have a new recipe to share with you all.

Now, I’m not going to lie–I like healthifying stuff (that’s not a word, but moving on…)

Truth be told, you can usually subtract half the sugar in most recipes and you’ll hardly be able to tell the difference.  In case you didn’t notice, we Americans like our sugar so apparently every recipe needs to have 2+ cups of the stuff.

A lot of times, these “experiments” end up in disaster. I once tried to make brownies using chocolate protein powder and it tasted like a cross between a Necco wafer and a cocoa sponge.  Thankfully, I finally discovered a semi-healthy recipe that actually tastes great:

Chocolate chip pumpkin bread!

Now, in no way shape or form is this dessert low-carb, low-sugar, low-whatever.  But it IS higher protein and lower in calories than your average dessert bread, all while tasting just like it was made in a bakery. Plus the protein makes it easy to just have one piece of the stuff, instead of doing that fun trick where you keep cutting off “slivers” and convincing yourself that “slivers don’t count” (guilty as charged).

Most dessert breads rely on copious amount of oil to make them moist–but here I’ve replaced the oil with a container of greek yogurt and two bananas.  Between the yogurt and the mashed bananas, even after an hour of cooking this bread comes out like the delicious dessert bread you know and love.

So if you a) like pumpkin b) like chocolate and c) love pretending dessert breads are healthier than pieces of cake, make this!

Chocolate Chip Pumpkin Bread (adapted from Courtney @ Sweet Tooth Sweet Life)

  • 2 ripe bananas, mashed (I used frozen ones that I defrosted)
  • 1 6 oz container plain greek yogurt
  • 1 cup canned pumpkin (not pumpkin pie filling)
  • 1 cup sugar
  • 1 egg
  • 1 cup whole wheat flour
  • 1/2 cup white flour
  • 1 cup chopped walnuts
  • 1 cup semi-sweet chocolate chips
  • 1 tbls. vanilla extract
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice

Combine bananas, yogurt, sugar, egg, vanilla, and pumpkin in a large bowl.  In a separate bowl, combine both flours, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.   Toss the chocolate chips and walnuts into the flour mixture.  Finally, slowly add the dry ingredients to the wet ingredients, mixing until just combined.

Pour the mixture into a 9×5 loaf pan lined with aluminum foil and sprayed with cooking spray (this speeds up cleaning time).

Put it in a 350 degree oven for 45-60 minutes, or when a toothpick comes out clean. My bread took 55 minutes, and I took it out because I noticed the sides were browning and would burn soon if I didn’t do it.  This is a very moist bread like I mentioned, so sometimes the toothpick trick won’t work.  Keep an eye on the color of the bread and if it’s past 45 minutes and looking a little too dark, take it out. Breads will continue to cook in the pan anyway.

Good luck  keeping this around the house for more than a day or two!

Fun fact:

There are 1927 calories in one cup of vegetable oil. Here I replaced that with two bananas and a container of greek yogurt, which comes out to approx.  310 calories. Hence why it’s totally okay to add all those chocolate chips 😉

weekend happenings

This weekend was full of firsts.

First apple picking of the season

It was insanely hot for October (hence the shorts) but doing activities like this make me so happy because I get to enjoy all that fall in the Midwest has to offer.  Plus this apple orchard was less than ten minutes from my house and I had no idea! I’ll definitely be back this season.  Now I just have to figure out what to do with all my apples…

The whole experience at The Signature Room was magical. I’m a foodie but I don’t go out for high class meals like this often, so it was a really nice treat! I felt like a grown up 🙂

It might not look like much, but my mom and I took off a ton of the old leaves and fake red berries and replaced them with a ton of vibrant berries with a beautiful fall palette.

First time trying Turkish Get Ups

This workout was pretty focused on practicing the new movement, so after we were done I headed to the gym to get in some time on the elliptical.  It was fun to learn a whole new high-function movement, though!  If you’re interested, feel free to check this out : 7 Secrets of the Turkish Getup

Oh, and it’s hella awkward. I’ve never done anything like this before so it was weird at first. But after a few times I can see why it’s an effective workout.

In other news…

I’m also using this time to really get a fire under my butt about what the next step is for my life. I’m using the new season as an excuse to jump-start my job search and self-discovery. There’s no better time than now, and I realize I need to make some big decisions before I start to get distracted by the holidays. It’s a crazy time, and it’s only going to get crazier!

things i love friday

Well it’s one of those days — gloomy and cloudy but still a little humid. Probably my least favorite environment to be in. That probably explains the bad mood I woke up in this morning. You know what the best cure for a bad mood is, though? You guessed it: work. it. out.

I honestly can’t think of a time in my life when I went for a workout and it made me feel worse. Endorphins FTW!

Today’s workout was back to the basics.  After a 200m run warmup along with stretching and some quick practice moves, we got started with the WOD.

Seems easy, but after the first 5 minutes my whole body was on fire. After this 22 minute workout we all tested out our core strength by holding side planks as long as we could. I have to admit I loved this part because this is one of my strengths, so it felt good to be the last one in the class holding up my plank (especially because my upper body strength pales in comparison to most of the people at bootcamp). The whole workout, including warmup and planks, took a little under 30 minutes.  Fast and intense, as always.

Each day I get closer to my goal of being able to do pull-ups and push-ups like a champ. For some reason, while I have always had legs built for a horse, my upper body has been super weak.  It’s funny because you always wonder “what’s the secret?” I’m learning now that there is no quick formula or secret. Since I’ve started doing simple exercises such as ring rows, pushups, burpees, and resistance-band pull-ups, my muscle is slowly but surely building. Don’t come across me in a dark alley!

Now here are a few of my favorite things from this week.  It’s going to be extra food-heavy because I did a great job preparing creative lunches this week so I’d love to share my ideas with you. Enjoy!

I’ve loved Ellie Goulding since I heard her perform on SNL. I’m so happy she’s getting more popular so I get to hear her songs on the radio more often.

I heard this song on the radio the other day and I immediately became 13 years old again. This is definitely a sing-along-in-your-car song. It’s beautiful!

Hummus and veggie sandwich with a slice of swiss cheese and a bowl of black bean sweet potato soup. My mom brought the soup home from work because she knows I have an obsessive love for sweet taters and it was all kinds of yum.

I’ve been doing such a great job of only drinking water (and coffee of course), but when I need something different nothing beats a rootbeer Zevia.  October decorations hanging out in the background just waiting to be placed around the house.

Fruit/veggie bowl. Sugar snap peas, farmer’s market carrots, granny smith apple and lots of pb. This is a much better midnight snack than my usual tortilla chips or chocolate. I’m working on it!

Peanut butter oatmeal. Filled with lots of chia and flax seeds for extra crunch, fiber, and protein. I’m a weirdo and don’t like eating peanut butter in hot oatmeal (it makes me nauseous for some reason) so I let the oatmeal cool down and then topped it with extra chunky pb.

Remember that time I decided to get all unique and creative and buy a horned melon to see what it tastes like? Yeah it’s not good. It’s like a cross between a cucumber and a kiwi. AKA two foods that should never be in the same realm of tastes. Skip it!

I realize now that I did a good job of conveniently not snapping many pics of all the treats I had this week. I promise my life is not a perfect world of vegetables and whole grains. My sweet tooth is a raging monster and I often munch on the extra fries at work. It’s not about eating 100% healthy during the week and then binge eating on the weekends. It’s about balance and intuitive eating every day.

Yesterday was full of activity so I’ll just jump right into it. Lot’s of great food and good sweat sessions.

First I have to share with you my last two workouts. Monday’s workout left my arms and legs feeling like jello, and Tuesday’s was basically a giant shake-out for my whole body: lot’s of running and core work.

After breakfast I decided to throw together a crockpot dinner for later. Fall always makes me want to use the crockpot. It’s so easy

Before lunch I did some serious grocery shopping.

 Highlights included:

  • Annie’s Organic mac n cheese — Arthur shapes!
  • Key lime greek yogurt
  • String cheese (current snack obsession)
  • Horned melon
  • Granny smith apples and unsweetened apple sauce — perfect for Fall

Lunch

The highlight of my day was lunch because I got to grab a quick meal with Zman.  We were lucky enough to spend a few hours together before he left for a few days to mourn the loss of his grandmother with his family in Dallas.  I’ve been wanting to take him to an awesome bbq place in my town and since he hardly ever has the chance to make it out to the suburbs, yesterday was the day.

IMG_3113I chose pulled pork tacos with a side of fries and Zman got the brisket platter (so Texan)

Dinner

I really enjoyed my afternoon taking care of some errands with Zman and driving him to the airport, but by the time I got home the last thing I wanted to do was think about making dinner.  Thank goodness for the crockpot!

IMG_3096I prepared one of my favorites: shrimp creole!  Recipe will come later this week.  It’s a delicious combination of peppers, onions, celery, shrimp, crushed tomatoes, along with paprika and other spices. Incredibly healthy and satisfying when served over brown rice.

IMG_3097Dessert went unpictured but let’s just say I’m doing a great job getting rid of a stash of tootsie rolls that I found in the pantry.
