Bran muffins can be tricky. Well, muffins in general can be tricky. You never know if you’re biting into a healthy, wholesome snack or a oversized sugar bomb. Sadly, bran muffins are often the worst offenders. Most recipes contain healthy ingredients like wheat bran, walnuts, and raisins, but often in way too big of portions.
Luckily, my family still has a recipe from way back in the day when my grandma used to make bran muffins. Original recipecard and all:
How cool is that?!
Besides being incredibly healthy, these muffins are delicious. Topped with a little honey, they’re just the right amount of sweet and filling.
I love that I can continue to show my late grandma love by baking these muffins. They’re perfect for a light breakfast (if you add some protein and fruit on the side) or a quick snack.
Bea’s Bran Muffins
Ingredients
- 3 cups All-Bran (cereal)
- 1/2 cup vegetable oil
- 1 cup raisins
- 2 cups walnuts
- 1 cup boiling water
- 2 eggs
- 2 cups buttermilk
- 1/4 cup molasses
- 2 1/4 cup while wheat flour
- 4 teaspoons sugar
- 2 1/2 teaspoons baking soda
- 1/2 teaspoon salt (optional)
Combine cereal, oil, and raisins and pour boiling water over them (mixture 1). Set aside to cool.
In a small bowl, combine eggs, buttermilk, molasses. Add that to cooled mixture 1.
Combine flour, sugar, baking soda, and salt: add flour mixture to cereal mixture 1, stirring just enough to moisten dry ingredients. Cover batter with plastic wrap and let stand 15 minutes, preferably an hour.
Preheat oven to 400. Bake in greased muffin tins for 20 minutes, or when a toothpick comes out with just a few crumbs.
Enjoy!
Questions:
- What’s your favorite type of muffin? I love lemon poppyseed or fresh blueberry ones!
- Any big plans this weekend?
Grandma’s recipes are always the best! I used to love my grandma’s chocolate chip cookies and now I’m wondering if I have her recipe lying around anywhere.
My mom has just started organizing all my grandma’s recipes that are lying around and I can’t wait to see what else she had! They’re always the best 🙂
I have never had a bran muffin before. My favourite muffin has to be blueberry. I love them!
Fresh, hot blueberry muffins are incredible. Muffins in general, man…delicious!!
Nothing beats a recipe from a Grandma! Lucky for me, Bran muffins are my favorite! But I try to avoid them because they are usually loaded with sugar and about 400 calories or more! I am pumped to try this recipe! It was so nice of you to share this with us! Thanks! I can’t wait to give this a try in memory of Bea!
Not too much going on this weekend…I was going to plant some seeds to start indoors, but it is currently snowing and I cannot imagine shivering in my garage and doing it…maybe if it warms up! Have a great weekend! 🙂
Aw thank you Stacy! Yeah, these aren’t mammoth in size the way most bran muffins are. They’re perfect nuggets of deliciousness 🙂 I hope it warms up so you can get your indoor garden started! What a fun idea! I don’t like gardening but I know I’d love it once I got the work done and had veggies, herbs, and flowers that I grew myself.
These look so yummy! I love blueberry & cranberry muffins– ooh, and double chocolate muffins, too! Mmmm!
Oh, and I completely agree how you never know what you’re going to get with muffins if you don’t make them yourself. Some are absolute sugar & calorie bombs!
Is there really a bad muffin out there? haha
Ahhhh. So sweet! Love that the recipe card appears to be well-used 😉
1. I agree! Lemon poppyseed muffins for the win!!
2. My mama’s coming to town! I’m from North Dakota so it’s always a treat when she can make the trek to Chicago.
Lemon poppyseed ANYTHING is amazing 🙂 I hope it’s a beautiful weekend here so you two can enjoy her vacation!! How fun!
Me too! Although it looks like possible snow again Sunday 😦 Wish it was going to be as nice as last weekend!
How much do I love that recipe card! My mother had those around the house all the time when I was growing up! Now I just take screenshots on my iphone haha – how times have changed,
My favorite type of muffin is anything with chocolate. mmm
Have a great weekend!
Haha times really have changed! My Pinterest board is a zoo and my phone is full of random Instagram recipe screenshots. I love getting my hands on the real, written thing though 🙂
This is adorable. I love how you have so many recipes from your grandmother.
I learned to cook steak, pancakes (hungry jack) and mac n cheese (from a box) from my mom. Not really recipes to hand down… They are already printed. On a box.
Hahaha but those are classics! Aaaaaaand now I want mac n cheese 🙂
Love the fact that you still have these traditional recipes and you are sharing with the world! Great way to keep the spirit of your grandma living on through you!
Hope you have a fab weekend Lauren!
I love stumbling upon the old recipecards with her handwriting 🙂 Have a great weekend too!
I love family recipes like this!! These muffins look delicious 🙂
Family recipes are the best! I love the history 🙂
Oh my gosh, I love that recipe card! Old recipes like that are my absolute favorite. I like browsing through food blogs and Pinterest as much as the next girl, but there’s something way more special (in my opinion) about using a recipe that’s been in your family for ages. As for muffins, lemon poppyseed are my #1. Love, love, love. Well, that or chocolate chip. Mmmm.
Isn’t it awesome? I love stumbling upon recipes in her handwriting 🙂 sometimes those old recipes have the funkiest ingredients tho! Lovvvvve lemon poppyseed anything. Donut Vault lemon poppyseed donut is INSANE
These are SO cute! …agreed, most muffins that you buy at the little bakery/ store are quite simply, TOO big!! haha, these look so fun! …and how sweet is that that it’s a family recipe?!! Love that!
Perfect size, perfect sweetness 🙂 and it’s wonderful that we still have the original recipes.
Bring me some muffins on Sunday.
I have been thinking a lot about lemon poppyseed muffins lately. Must be that lemon pistachio donut. Now I want both.
What is with the massive sweet tooth going around? Now I want ALL the things you just said, AND I just found out it’s National Macaron Day so now I want some of those too!
LEMON POPPYSEED ALL THE WAY! (as long as there is glaze. Always glaze) My mom has recipes like that. Most of them have oil or some sort of chocolate grazing the surface. At least we know what the recipe calls for each time we make it =P
Lemon poppyseed is clearly a fan favorite! Love those too!
These look amazing! I”ve never made bran muffins but I love them. We used to get them at Publix when we are down in Florida at my grandparents!
I really like making them myself because they’re so incredible when they’re fresh! Muffins from grocery stores are really good too though, for some weird reason.
One of my top baking rules: if it is written on a really old recipe card with scribbled, cursive, slanted writing…it’s gotta be good. Seriously. And the fact that these contain molasses (one of my favorite ingredients) makes them a winner for me!
Molasses is such an old-school ingredient isn’t it? And I like that rule — definitely a good one to live by.
oh I LOVE bran muffins because they are oversized and I claim them to be healthy 😉 Love the old school way of recipe collation- I wonder what other gem’s young Bea has 😉
I’ll definitely have to search for more of Bea’s gems 🙂 she is the inspiration for this blog, after all!
Grandma recipes are always the best! My grandma knows I think she’s an amazing cook, so for Christmas one year she surprised me with a recipe book of all my favorite meals that she’d make.
This is so cool! I wish I had access to all my old family recipes. My mom did something with them years ago. Lemon poppyseed is totally my jam! If you have a good recipe for that please pass it along! 😀 I hope you had a lovely weekend!
