Actually, all the soup for you. You can have all of it. Just not mine.
In an attempt to be healthy AF (I’m traveling to Arizona next month and would like to look less like the Michelin man and more like early 2000s Britney) I’ve started eating out less and cooking more. Oh, and saying yes when people invite me to 5:45am workouts (note to self: don’t make this a habit. I was seeing double by the time 4:00pm rolled around and almost took a nap in the bread aisle at Jewel).
Unfortunately our morning meeting at one of the other manager’s apartments had coffee and donuts waiting so Michelin man won again. Maybe tomorrow.
Regardless of how many baked goods I am offered I will never stop my ferocious attempts at being domestic in my own kitchen. While making my grocery list today I had a craving for soup and after a quick Pinterest scroll I landed on Jen’s Sweet Potato and Cauliflower Soup.
It is pretty easy to assemble — peel and cube two sweet potatoes, chop up one head of cauliflower and one onion, top with thyme, paprika, red pepper flakes, and salt and pepper, and then let it simmer in chicken broth and its own goodness for five hours.
After all the veggies were tender I turned off the crockpot and added two cups of milk and 2 oz of cream cheese, just enough fat to make this a stick-to-your-ribs kind of soup, nothing crazy. Then I worked in batches and putting liquid and veggies in my NutriBullet and blended until the soup still had a bit of texture before sprinkling it with a final touch of salt and then calling it a day.
I know what I said about wanting the holidays and winter to be over with, but the thought of there being fewer and fewer soup days in the upcoming months actually made me sad today after trying this soup. It’s that good. It’s so, so good. So no soup for you. All for me. Unless you make it yourself. Then…can I come on by?

Best soup ever would have to be a roasted tomato one I made – I swear roasting tomatoes with olive oil and basil makes them super sweet and incredibly amazing. I would be drooling about it if it wasn’t so hot right now…
And I couldn’t live without my coffee grinder… Because, well, coffee!
I’ve never been a huge fan of tomato soup but I bet you my tastes have changed now that I’m older! Must try asap. I love the idea that tomatoes get sweet with roasting…yum!
I had nothing but tom yum soup base and chicken broth and gummy bears and jello and coffee and solution yesterday. Soup is a bit of a sour spot for me right now ;D My favorite soup would be loaded baked potato (at least, fave from childhood) or chicken corn chowder (again, childhood). Now? Tom Yum soup. AMAZING
Haha I bet the last thing you want is soup right now…I’ve never had Tom Yum soup. Must add it to my list. Hopefully your stomach can handle the deliciousness that we’re going to feast on tomorrow!
I think my favorite soup is plain of chicken noodle – it makes me so happy!!
I’m allllll about chicken noodle soup. If I see it fresh at the grocery store I always get a container of it to keep in my fridge. Total comfort food.
I’m not a soup person. I like to chew. Although I once made a creamy soup made with broth, farmer sausage, kale and whipping cream that was pretty killer.
I used to be that way too! I never understood soup — is it a snack, is it a meal? No, it’s neither.But then I started pairing my soup with a hugeee chunk of sourdough bread and it’s all good.
Best soup I’ve ever had is my mother’s split pea soup. By far. She makes the best soup!

I have never been a soup kind of person, but give me a bowl of chili or that zuppa soup from Olive Garden and I am a happy camper!

Recipes like that are why having an immersion blender is the best thing in the world. That and our cutting board were my favorite wedding presents!
I feel like every time I’m on a roll with eating healthy, someone brings donuts to work. It’s always the way!
My neighbor offered me her immersion blender but that would have meant leaving my warm apartment, crossing the street in the snow, and getting it from her. And I’m too lazy for that! haha
You just reminded me I have some soup I need to eat. And that I’m just hungry in general.

That soup sounded kick ass until I saw…. Cream Cheese – LOL!! But hey, I bet it made it amazing, I just cannot eat it and I am not sure there is a dairy-free cream cheese in this world yet, is there?

I totally agree that 5am workouts always SOUND good until mid afternoon when I am exhausted and a bit grumpy!
