let’s talk about foooood

Remember how we’ve been talking about how spring makes you want to eat lots of veggies and lighter foods? Well, I’m definitely not at the point when I wake up every morning jonesing for a spinach smoothie and a kale salad, but I’ve been loving some greens lately! I deserve some credit considering winter seems to have poked it’s head back after a 75 degree weekend. I have no freaking idea how this keeps happening, but yesterday I left work and had to walk home IN THE SNOW. On April 16th. Granted it’s less than an inch but seriously? Seeing white on the ground after a weekend spent playing outside in shorts and a t-shirt isn’t just depressing, it’s downright mind-boggling. I’m not an environment fanatic but these dramatic changes within days is pretty scary. Hopefully spring gets it’s act together asap.


Moral of the story is, maybe if I keep eating my greens I’ll FORCE spring to come. Yeah, that’ll happen.

The best grilled fish tacos I’ve ever had!! Plus tots. The perfect meal

Okay and now I’m HUNGRY. Breakfast time 🙂 Have a great day!

  1. those are some delicious looking meals there, girl. and i hear ya on the “wth is up with this Spring that’s posing as Winter” business — we went from 70 to 30 here in NYC too. a little piece of my soul died when i had to put flannel pjs on again last night. 😦

  2. I’m glad I ate before reading and looking at your post because YUM, I think I’d eat everything in my house! These pictures look really tasty and I LOVE roasted sweet potatoes with peanut butter!! It’s so good!!

  3. So, I’m not usually a salad girl, but that first one you pictured looks amazing! And you had me at Portillos, I could totally go for a cake shake right about now! It merits a trip to Chicago for sure 🙂 Hope spring comes and stays for y’all soon!!

  4. mmmm everything here looks delicious!! FOR breakfast, anything and everything with nut butter. I find that if I don’t start my day off with nut butters and coffee, I become an irritable mess by 10am. Not to mention, I always seem fuller longer with the nut butter. Give me those healthy fats!!

  5. Yeahhh Michigan was pretty much the same deal. 75 on Sunday and then snow on Tuesday. Gotta love the Midwest! I’ve also been feeling the sweet potato nut butter combo lately but today, I chose to be super healthy and grabbed a chocolate chip bagel with cream cheese for breakfast at our work conference.

    And this weather? I quit. I just quit.
    It’s funny that you mention the sweet potato NB combo because I suggested it to my husband this weekend for him to have after his double round of basketball and he literally almost sh*t a duck. Well, honey, I’m sorry if you’ve been in the dark too long! I need spring to get its butt together so that I’m not running in snow this weekend!

    1. No way! That’s crazy! We should definitely go on a run together sometime or maybe go to Flywheel for a free class (first one’s free)? I need someone to do these activities with haha. I’m glad you opened your husband’s eyes haha it’s truly a wonderful snack. I’m not doing the Lakefront 10 miler because I’m heading to the suburbs to be with my family for Easter weekend but good luck! Hopefully your injury cooperates 🙂
