WIAW: not your average hump day

Well, it’s another Wednesday. But not your typical hump day! The Chicago Marathon Lottery is closed, it’s Earth Day, and I officially have watched the “Unbreakable Kimmy Schmidt” season twice on Netflix.

Alright, you didn’t come to my corner of the internet to be peer pressured into binge-watching yet another show, right? No, it’s Wednesday, so you know what that means:

Breakfast

A classic — two egg omelet filled with cheddar cheese, peppers, Morningstar sausage, onion powder and red pepper flakes. Oat bread on the side topped with butter and jam (I decided to mimic a restaurant and add butter this one time and it was perfect. I don’t think I can turn back now…)

I was home for lunch so I was able to whip up a pretty elaborate dish. My new favorite, the Chile Lime Chicken Burger from Trader Joe’s with a side of steamed broccoli (plus lots of extra ketchup and bbq sauce on the side and a few handfuls of tortilla chips).

Dinner

I worked late which resulted in heating up leftovers of my Thai Noodles (this plate x2). Roasted asparagus on the side (overcooked, but still delicious. I’m so happy it’s asparagus season!)

Snacks/Dessert

As I’ve told you, I’m a snacker. Throughout the day I had some stovetop popcorn made with olive oil and salt, lots of handfuls of chocolate chips, and some greek yogurt banana bread.

I’ve gotten progressively worse at taking photos of my food as I’ve continued as a healthy living blogger so thanks for bearing with me. What was the best snack you came up with this week? I’m struggling. I need more snacks that are easy to carry around in my purse. Any ideas are welcome!

PS I’ll be back soon to share my experience at a DOUGHNUT MAKING class last night 😀 To say I’m excited to share what I learned is an understatement.

  1. Those donuts look amazing and I definitely should have come to that instead of the social media workshop that was at the same time. It worked out better timing-wise since I had to teach until 530 anyway. You must tell me more about donuts.

  2. Oh my gosh those DONUTS. Those look amazing.
    Really all of this looks good though. Especially the thai noodles with asparagus. And even the banana bread and I can’t even eat banana. WIAW always kills me when I read blogs before lunchtime!

  3. Butter on toast is always better! I think a doughnut making class would be so awesome.

    I have no good snack advice because I haven’t really been snacking lately. There’s always the usual- bananas, greek yogurt, etc. Usually I just want chips.

  4. I had major doughnut making tomo when I saw your picture on Instagram! Can’t wait to hear more about it! Trader Joe’s trail mix is my go to snack. Or an apple with peanut butter. Or sometimes just Nutella outta the jar 🙂

    1. I actually love cooked carrots! I just never thought to eat them regularly — those are usually only at holiday dinners. Great idea! I love pistachios too! Can’t wait for payday on Friday so I can stock up on nuts 🙂

  5. While you all were making donuts, I was drinking beer. Even swap. And you must try sunflower butter, it is my favorite.
    Also, I have now seen UKS x2 as well. I made Alex watch it. He loved it. WINNING

  6. Okay, so your breakfast looks amazing, your lunch looks amazing, your dinner looks amazing, and your dessert looks amazing, so I’m thinking that means you’re a whole lot of amazing!! Hehe! 😀 Seriously though, you are amazing and seriously though, I’m having a thing lately with bread and jam, so hehe, my mouth is watering looking at your breakfast. Also, your burger looks amazing! I love the toppings!! Yum yum! I can’t wait to hear about your doughnut making class!! That’s FUN! Also, I love snacking, too! Lately, I’ve been eating red grapes and cashews. It’s a tasty combo.   7. OMG I LOVE DONUTS!!!! I have a recipe to make them in the microwave (I haven’t tried it but plan to soon) There are no vegan donut shops around here and the only place that sells them runs out quick! I cannot wait to hear about your class. As for good snacks, Id say a banana. So simple and it has it’s own package lol

  8. Ahhh now I have that Kimmy Schmidt song in my head again! It took me a few episodes to get into but once I finished it I was gutted! It should have been a full 24 episode season!
    Bars, nuts, dried fruit and jerky are what I carry around with me in my bag for snacks and if all else fails a banana!

    1. I know I really hope it comes back for another season! How could it not?? All great snack ideas — the banana is key. I need to find a healthy bar that I TRULY love. What’s your favorite dried fruit? I’ve heard mango is good…

      1. Ooh mango is very good! Just try and avoid ones that are coated in sugar!
        My favourite dried fruits are plums, cherries, pear and I have recently found dried orange slices which are amazing! Oh and dates obv but that goes without saying!

  10. Your omelet is a thing of beauty. Teach me!! I’ve been trying to make omelets lately, and it’s always a disaster. Well, maybe not a *disaster*, but the struggle to flip one half onto the other is oh-so real. And how cool that you went to a donut making class! Can’t wait to hear more about it!

  12. I loved Unbreakable Kimmy Schmidt! I watched it a couple weekends ago and could not get enough. It’s a tough call, but Titus is my favorite character.
