spring recipes + that time I just kept running

HAPPY FRIDAY! Anyone else feeling particularly sunny this morning?

Happy spring days make me crave country music like no other. I know country music is pretty polarizing – you either love it or you hate it. But I love it and you’re reading my blog so listen or keeeeep scrolling 🙂

I had such a great night last night! I got off work and knew I needed to go for a run. I rushed home, changed my clothes, and headed out to the lake.

It was one of those runs where I really pushed myself. Not in speed, but in distance. I set out to run four miles but just kept going! Six miles in the books. It’s exactly what I said a few days ago – get me outside and my running potential soars. And we all know good runs put us in the best mood, so I woke up with a lingering runners high.

In other random news I’ve moved passed egg sandwiches and am back on the Kashi train. Kashi + tonssss of fruit + chia seeds + almond milk is the way to go in these upcoming spring/summer months.

And I thought I hid it pretty well that I didn’t shower yesterday but look at that ‘do. Hair errrywhere.

I’m pretty excited for this Easter weekend! It’s going to be so fun to spend the next two days with my family. We have cooking, bowling, and brunch plans so it really doesn’t get much better than that. After hours upon hours of Pinterest-hunting we have our final menu put together, but since I wasn’t able to include all the deliciousness that I found I figured I’d share the recipes with you.   1. Wow, great job on your 6 miles!! That’s awesome you were expecting 4, but ran 6! What a great surprise! I really want the carrot chocolate-covered strawberries!! Wow, how unique!! 😉 Have a great weekend- it’s sounds like you have fabulous plans with family! How fun! I have family plans, too!! Should be fun!!

  2. So basically you pulled a Forrest Gump (I just felt like run-ning). I love the carrot strawberries! Adorable!
    Re: country music, I never liked it growing up (unless it was basically pop), but then I listened to it a bit with one of my best friends, so I associate it with her, and then, when writing my thesis, I needed to switch things up when I wasn’t writing (I started listening to dubstep and Elllie Golding etc while writing) and somehow I found myself listening to country. I’m still not into folksy country, but I definitely like the more popular country songs.

    1. Yeah I love either a) bluegrass b) pop country or c) ANY country if it’s sunny and I have a margarita in my hand 🙂 I love the Forrest Gump reference lol I totally should have thought of that and put it in the post. Ellie Goulding is GREAT writing music! I love her

  3. The same thing happened to me today! I set off to do a 30 minute run and 50 minutes later I landed home then continued for a 10 minute walk! It was the best!
    I love country music as well especially during the summer!
    That cheesecake fruit salad looks so yummy!

    1. It’s weird how some days you can barely knock out the first mile and then others you just keep going and going. And I love how they use the word “salad” in the recipe haha it’s basically a sugar bomb. But that’s perfect for Easter, right? It looks so yummy
